Well , today I bring Chicken Vinda to your kitchen .
It's a Portuguese recipe which over the years has become part of a Goan culture .
So let's begin .
Let's first begin with diced onions .
The onions are diced .
This goes straight in the grinder .
Along with this , I'm gonna add in some cloves of garlic , ginger for the spices .
I have sticks of cinnamon , a few peppercorns and a few cloves , some cumin seeds , some turmeric powder , some salt and along with this , some dried red chilies , I'll run this into a fine paste .
Mhm .
Well , since the onions would release a little bit of its water , you may need very little of the other liquid .
Here .
I'm using some malt vinegar and continue till it becomes a fine past .
You can keep checking the consistency and if required , keep adding more vinegar , the masala is done and ready .
Let's now start making the curry .
This is one of those recipes which works awesomely well for the health conscious .
If you notice this recipe has no oil instead , I'm using water , I'm taking some water in a pan .
This recipe is one of the many versions that you find of vida .
While there are a lot of versions that also use tomatoes or tomato puree .
This is one without tomatoes .
So do try it while the water is still heating up , adding in the washed pieces of chicken along with this , I'm adding in the spice mix .
Give it a nice stuff .
Cover this completely and let it cook undisturbed for the next 20 minutes .
It's been 20 minutes now and the chicken has been nicely bubbling away in the spices off , goes the flame now and this is now gonna be covered for the next 15 minutes so that the spices and the chicken rest and the fat kind of floats on top .
So let's wait for that .
It's been 15 minutes now and it's been resting on dumb .
Let's see it .
Now , the chicken has released all its fat and that's the oil that you see floating on top .
If you've noticed this recipe is more like a pickle , the longer it rests , the better it tastes .
So here we have chicken Vindaloo which is ready .
