Oil Free Chicken Fry Recipe - Zero Oil Tasty Chicken Roast -Oil Free Chicken Recipes For Weight Loss

Hey guys , welcome back to my channel .

And today I'm sharing an oil free chicken roast recipe , which is almost like a chicken fry .

And yes , you heard me right .

There is no added oil in this chicken recipe .

This oil free chicken roast is a traditional recipe from Kerala which my Amma used to make though she did give a taka towards the end of the cooking .

Amma learned this from her mother and it has been around in the family since a very long time .

So basically you are cooking the marinated chicken in thick coconut milk , cooking coconut milk , gives us coconut oil .

You can understand the whole process a lot better if you watch my how to make coconut oil at home .

So once the oil is released from the coconut milk , the chicken is roasted in the pure virgin coconut oil .

And yes , this is a healthy and guilt free chicken recipe .

I will mention the tadka ingredients in the description box just in case you wanted to know , I have already shared an oil free pannier curry recipe .

I'm using 900 g of bone in chicken , which I have cut into slightly large pieces .

I have also made small slits in the leg pieces so that the masala seeps right in .

I'm making a masala which also includes the garra masala .

However , if you have homemade garam masala , you can use that instead .

But I feel making the masala fresh , gives more flavor to the dish .

So into my chutney grinder , I'm adding in half teaspoon .

So which is also known as Perria Gum in Malayalam , 1/4 teaspoon jira or cumin seeds , one inch cinnamon stick , which I'm breaking into small pieces , half teaspoon , whole black pepper corns , one third of a maize , six whole cardamoms , half teaspoon , cloves , half of a star and is a small piece of nutmeg .

I took a small piece from a whole nutmeg as you can see grind all this coarsely .

Once it is ground coarsely , I'm keeping aside half of the ground garam masala in a small bowl into the same chutney grinder .

I'm adding in one sprig of curry leaves , 1.5 inch ginger which I have cut in of small pieces .

One whole garlic pod .

I used a medium sized pod of garlic like this .

Add in four green chilies .

Note that I'm slightly on the spicier side .

If you don't like too much spice , you can use two green chilies or you can totally omit the chilies .

Since this is a traditional recipe , I'm using 15 shallots , which is also known as Cher in Malayalam .

Traditional recipes of Kerala usually are made with small onions or shallots .

However , you can use one medium sized onion instead .

Now grind all this and this is how it looks once it is coarsely ground , add the ground masala into the chicken , add in half teaspoon turmeric powder , two tablespoon Kashmiri chili powder .

Now I like to use Kashmiri chili powder as it gives a vibrant red color to the dish and it has less heat also .

But if you are using ordinary chili powder , reduced by half juice of one whole lemon , 1 to 1.5 a teaspoon salt or as needed .

And today I'm using ordinary salt and not pink salt .

Now with your hands , mix the masala into the chicken and the kit is marinated for about 15 to 20 minutes or you can keep this overnight in the fridge while the chicken is marinating .

Let's make some fresh coconut milk .

I'm using one half of the coconut , which I'll be grating and add the grated coconut to a Chutney grinder and blend it with little water once it is blended , add in one cup of water and then squeeze the coconut through a strainer so that you get thick coconut milk .

So this is the thick coconut milk which I have extracted freshly .

It measures about 300 ML to cook and dry roast the chicken .

I'm using heavy bottomed , deep Castine skillet .

However , you can use a steel , heavy bottomed pan or a cady into my Castine pan .

I'm adding in the thick freshly squeezed out coconut milk switch on the flame .

So , what we're basically doing is we are cooking the chicken and the coconut milk and once the water content has evaporated from the coconut milk , the oil from the coconut will be released out and the chicken will be roasted in the natural healthy virgin coconut oil .

Now , as the coconut milk starts to heat up and in the marinated chicken and once the coconut milk starts to boil , give it a stir and cover it with a lid , cook on medium flame .

And after five minutes , this is how it looks .

And you can see that water has released from the chicken .

So again , I'm putting the lid back but giving a little gift and cooking for another five minutes and five minutes later , the gravy has thickened and the chicken is nicely coated with the gravy .

I'm stirring just to make sure it's not sticking to the bottom of the pan .

So from now onwards , keep the flame on the lowest .

While it is cooking on low flame , you can see that the oil from the coconut milk has started to release out .

So now we need to dry up the gravy .

But if you like a chicken curry with little gravy , you can serve it at this stage , but I'm going to dry , roast the chicken and this is how it looks after exactly 30 minutes .

The chicken is fully coated with the masala and I hope you can see the oil releasing out as we are roasting the chicken .

So we are sort of roasting the chicken in this oil .

So , stir well and roast it on low flame until the chicken is lightly roasted .

As you can see .

Now at this , I'm adding in the kept aside garam masala and two sprigs of curry leaves .

The curry leaves gives a nice flavor to this traditional dish .

So do not skip it .

You need to mix well once the chicken starts to roast just to make sure that it is not sticking to the bottom of the pan .

And my healthy oil free chicken dry roast is ready to serve .

It took 40 to 45 minutes from start to get the chicken roasted .

Allow it to cool down lightly and serve with fries , roti or bakeries of your choice .

It will turn out more brown once it has cooled down .
