Today , I'm making chicken curry and I got a chance to learn about this uh chicken curry during our recent visit to Coco .
This is a typical uh coastal uh curry which is prepared with the use of fresh coconut and it tastes really yummy and it's really simple to prepare .
So to start with the process over here , I have heated my pan over medium to high heat .
And in that , I'm gonna add my whole uh dry spices first cause in your cinnamon stick , then here is a , then I have your clothes and a few black pepper cons .
Now I will go ahead and dry roasted spices for like 4 to 5 minutes or until a nice aroma starts to result from the spices .
And here I have roasted this whole spices for four minutes and if you can see this clothes and cinnamon stick has slightly changed its color .
And also I get to smell nice aroma of the spices .
Now I will remove the spices into a blender pot and now in the same pan , I'm gonna put in like one tablespoon of oil and in that goes in some sliced onion .
So here I have taken one large onion that I have flights and I will go ahead and try this up until it gets like a deep golden color .
And over here this ground masala is all ready .
You can see that it's smelling so good .
And here onions has also been fried .
They have caramelized really good and got nice golden or brownish color .
Now in that goes in about quite a cup of freshly grated coconut and we'll go ahead and uh roast this up until this coconut also gets nice golden color .
And there you have it .
I have roasted this coconut along with onions , poly 4 to 5 minutes .
And you can see that they have browned up really well .
Now , at this point of time , we'll turn off the heat .
Now , uh in the same blender pot uh where we have this uh ground uh dry spices .
I'm gonna add in this roasted masala and then we'll go ahead and ground this together .
Now , our primary preparation is all .
Now , next , we'll start to make this uh coconut chicken curry .
So over here in a pan , I have heated a tablespoon of oil .
Now , in that , we'll go ahead and put in this finely chopped onion , give that a mix and we'll sort it until it gets light golden color .
Now , over here , the onions has got a light color color .
Now , we'll go ahead and add in the rest of the spices .
So first goes in this ginger garlic paste , some masala and some bread chili powder .
So over here , I'm using this uh Kashmiri red chili powder .
Now , the good thing about this uh chili powder is it gives nice deep red color to the curry or any dish uh without making it too hot or spicy .
Now , we will go ahead and cook this up for two more minutes and after that cook for just about two minutes next , it's a time to add in chicken in there .
So over here , I have taken this uh 2 50 g of chicken , which I have washed really well and drained all the water from it .
I put in these chicken pieces and mix up real Yeah .
And after this chicken gets good coating of this masala , cover this up and allow it to cook covered for just about five minutes .
And once this chicken is cooked for like uh five minutes , let's open that up .
Do that one moment .
It already looks so good .
Now , move this chicken aside and we'll add in this ground masala in this chicken .
And I'm also adding a little bit of red chili powder in this ground masala for just for color , mix that up and I'll mix everything together .
These freshly ground spices , olives are nice past and aroma in any dish .
Now , let's go ahead and add in water .
So right now I'm adding three quarter cups of water also goes in some salt for taste .
Ok .
That is .
And now let's cover this up and allow it to cook until this chicken turns out nice and tender .
And over here I have cooked this coconut chicken curry over medium it for like 10 minutes now .
So let's go ahead and check that out .
It's smelling so good , this freshly roasted spices as wonderful aroma in this .
And look at that that's cooked all the way through .
Looks nice and tender and just a final step , we'll add in lots of finely chopped coriander la in that .
It's smelling so good and it looks so empty .
This uh chicken curry or coconut chicken curry typically is served with which is a kind of a pancake prepared with rice flour .

It also goes really well with uh uh that is a rice flour rote as well as java bari .
