My take on some Popeye's fried chicken .
I made up a spice mix .
I put the ingredients down below or maybe on the screen .
We're gonna start off by marinating them .
I wanna get these marinated for about three hours .
I guess I clean the chicken , let it drain some .
We're just gonna rub that in .
Get it coded everywhere everywhere and it's just normal spices , salt , pepper , garlic , onion , cayenne , paprika , little MS G , some accent .
All right .
We're gonna let this sit three hours .
We'll be back to fry later after three hours in the fridge .
We're ready for the next step .
Gonna make a dry batter .
I'm gonna do a cup of flour , half a cup of corn starch and have a teaspoon baking powder .
We wanna mix that up .
I'm gonna dredge the marinated chicken in there .
You start off with the legs .
You just put a light coat on these , shake off any excess , lay him out to dry .
It's gonna give us a good crispy skin .
All right , I'm gonna let those dry and I'll get the oil heating up .
I've got the oil heating up to 3 50 .
I'm gonna start on the dry better .
I want three cups of flour .
Damn .
Another half cup of corn starch in here .
It's about half a cup .
There you go .
Take a tablespoon are two teaspoons of that season .
Them add that to the batter .
Mix that up .
Set that aside .

Going in two eggs .

I want two more teaspoons of that seasoning and another teaspoon of paprika .
