Hello guys .
Uh my name is today .
I'm doing a typical Fijian chicken curry with rice and chutney salsa .
We're gonna start off with making a salsa and um this is all the ingredients I'm using just a little bit of red onion , do stuff .
Cucumber , a couple of tomatoes and some peppers , red and yellow .
What I do is I , I cut that and go down through again .
Nice and long strips .
So you're just doing the same with those tomatoes .
OK ?
The other thing I'm gonna add to this is a lime to just squeeze it through and also just some salt and a little bit of , and we'll just get a little mix and so we'll just put that in the fridge until we're ready to have our meal and just have some of that on the side .
How I got into cooking was just looking over my dad's shoulder really ?
Because he , he could like turn nothing into something for a whole lot of people and that's where it kind of got my interest pop this on .
So we're gonna use uh two onions .
So let's just straight down the middle .
It's nice and kind of smoky , hot that off for about a half minutes .
The next thing is we've got like a mix of cumin fre and mustard seeds .
And so I'm gonna take the C up two teaspoons straight into that .
There's the masala which got like a little bit of chili powder and I like maybe two or three seasons .
Then we've got chimera which gives the , the curries its yellow color , maybe about 32 or three of that .
Again , we give that a stir .
So we're gonna put that chicken in .
Y which is like the chicken thighs straight into the park .
We've called that chicken with all its spices .
And so you started to get that color through .
I kind of love any kind of curries with potatoes in it .
So we're just gonna grab these potatoes and throw it into that pot .
Give you stir and then the cover goes on and then obviously have that cooked out for about 20 minutes before we check that again .
I work as a chef .
I run my own business , a small catering business called The Marvel Kitchen and I do mainly film catering .
It's great .
It's a great job for me .
Can see the potato is all done .
Now , uh the chickens about falling apart .
It's kind of like at the stage where we want it .
We'll do a couple of uh spoonfuls of rice , some of that chicken and potato curry .
We're just gonna throw some salsa on it .
I'm just gonna take like a pinch of that .
This is kind of like sweet lime pickle .
We'll just do up a little bit on the side and then that's all good to go .
