One , it gets caramelized and gives a nice color to the curry and two , it balances the acidity from those tomatoes .
Next , it's time for the tomatoes .
I'm using store bought tomato puree .
You can even use canned crushed tomatoes or even fresh tomatoes if they are readily available at your place .
I have given all the details in the description box below if you want to use fresh tomatoes .
So please check that out , stir very well on medium heat for a few minutes so that everything gets well fried .
If you're using fresh tomatoes , you have to fry to the point when all the liquid from those tomatoes dry out and they give this pulpy dry kind of appearance .
Now it's time to add salt and I had coarsely crushed some black pepper that also goes in .
I added about three cups of water as my family likes it on the gravy side , add water , thinking about the amount of gravy you would prefer , but guys do not make a swimming pool as that will dilute the flavor .
Next comes Kasuri Me that is dried Feore leaves which I always crush before adding to release all those aromatic oils .
Then some Shahira masala , I have a video on making Shahira masala so you can even check that out if you want to make your own .

You can even use regular kara masala powder .
Now cover it on low heat for about an hour from time to time uncover and give a stir .
Now chicken at my place takes longer time to cook .
If you see your chicken is starting to fall off the bones , then do not wait for an hour .
But the slow and slow heat for an hour mellows down the tomatoes and makes the chicken more flavorful .

My chicken has become tender , do a taste test and adjust the seasonings .
I like to take out the bay leaves .
Now , as they have done their jobs next to add some more richness .
I added about two tablespoons of heavy cream .
Now , don't worry if you do not have cream .
In fact , this is the first time that I used cream for this recipe .
This little bit of cream was lying in my fridge .
So I thought of using it up .
The cream does add to that richness , but I promise you it tastes very delicious even without it , just trust me then cover it for a minute or two .
Finally , some freshness , roughly chopped coriander leaves serve this with rice roti or nan .
And according to me , any kind of meat curry tastes even better the next day .
So do not hesitate to make a large batch .
