Chicken and Thai green curry .

I am .
And today we are going to make chicken and Thai green curry .
What is unique about this recipe is we are going to make the Thai green curry paste and we are not going to use the ready made paste .
So let's quickly go through the ingredients to make the green curry paste .
We require around 10 green chilies , 3 to 4 shallots or small onions , nine garlic cloves , one inch piece of gel or Thai ginger three inch lemongrass stock quarter teaspoon , lemon rind or lemon zest .
A small bunch of coriander roots , two teaspoons , coriander seeds , two teaspoons , cumin seeds and salt .
Now , let's see the other ingredients which go in making the chicken .
Thai green curry .
400 g of boneless chicken , which is cut into one inch pieces , two tablespoons of refined oil , three cups chicken stock 3 to 4 c lime leaves , 3/4 cup , fresh coconut milk , a few basil leaves and two fresh red chilies which are sliced dragon leaf .

We'll start with the green curry paste for that .
We'll add the green chilies shallots garlic , bang lemon grass lemon rind , coriander roots , coriander seeds , cumin seeds a little bit of salt .
Now we'll add some water to this and we'll grind it to a smooth paste .

Our green curry paste is ready .
You can see the consistency of green curry paste .
We'll keep it aside for some time .
Here .
I have a nonstick pan .
I'll add some oil to it .
Once the oil is nice and hot , we'll add the prepared green curry paste about uh 3 to 4 tablespoons of it .
And we'll sort it this for uh 3 to 4 minutes .
OK .
Now we have sorted the paste for around 3 to 4 minutes .
It's time to add the chicken pieces .
Here .
I'm using boneless chicken .
But if you wish you can use uh chicken on bone and make this curry .
We'll sort it this for around 2 to 3 minutes .
The chicken pieces are nicely sorted .
Now we'll add the chicken stock .
After we add the chicken stock , we'll add some salt and we'll add the lime leaves to this cuffed lime leaves .
Don't need to chop them .
Just stay with your hand and add to the gravy .
We'll cover it and we'll cook for another 5 to 7 minutes .

You can see the stock is boiling and the chicken is almost cooked .
Now , we are going to add the coconut milk to it after we add the coconut milk mix it .
Well , add some basil leaves , fresh red chili and boil it for around 3 to 4 minutes .
Ok .
Now you can see the gravy is thicken and the chicken is completely cooked chicken .
In Thai green curry is ready serve it hot with steamed rice .
