Firstly , I want to start off by thanking you for all the sweet messages and comments that you left on last week's video .

I'm feeling a lot better right now .
It's a scary time to not feel so well .
But anyways , moving on to today's recipe .
It is for chicken and vegetable stir fry .
This is a really quick , healthy , colorful , beautiful recipe .
It's a great recipe for using up the leftover bits of vegetables that you have at home .
You know , half a carrot , a little bit of mushroom , some capsicum .
It's a great recipe for using up those kind of vegetables .
Let's get started with the recipe because I can't wait to tell you how easy it is to make .
So the first thing we're gonna start with is making the sauce for our chicken and veggie stir fry .
I've got some dark soy sauce here , do this .
I'm gonna add the rest of the ingredients .
Some chili sauce .
You can use a green chili sauce as well if you have that some ketchup , little bit , very little honey just to balance the flavors out gonna add just a tiny amount of salt and tiny because really , you know , everything that we've added here , soy sauce , ketchup , chili sauce , they all have certain amount of saltiness in them .
So just a little bit , not too much dash of pepper that are still , I'm also gonna add some flour , mix the contour really well into this sauce and help it thicken up .
And the last thing to go in will be some plain white vinegar mix , mix , mix and just set it aside for now .
We've got the chicken here for the chicken and veggie stir fry .
I have about 250 g of boneless chicken that I've just cut up into chunks like this .
Try to keep them as equal as you can because that will help it cook at the same time .
And I've marinated it with just salt and pepper , nothing else and let that rest for anywhere between 20 to 30 minutes .
It's got that much time to rest now .
So I'm gonna start cooking first with the chicken .
First is some regular vegetable oil and a bit of that sesame oil .
I told you about throw that out again .
I'm gonna take the flame back up to high and add ginger and garlic , finely minced ginger and garlic .
Throw that out and we're just waiting for the raw smell of the ginger and garlic to go away .
That's just gonna take a few seconds .
By the way , you can see that , what I've done is flip the chicken to the other side and you see it's brown slightly on one side .
That's perfect and that's exactly how we want it .
That's perfect .
It's cooked on both sides .
I'm just gonna turn the flame off and take out the chicken and let it rest on a plate for now , the sauce that we made earlier , ginger garlic , the chicken that we fried a little bit earlier on .
And I'm also gonna use some cashews here .
So just keep all of this ready next to you .
I have some of the oil left over in the pan from frying the chicken .
So I'm not gonna add any more .
Add some ginger garlic .
That's it .
A few seconds .
Turn the flame onto high .
Now I'm gonna start adding the veggies first to go in is some broccoli .
Look at how the broccoli has cooked .
It's turned a bright green .
I've given it just about two minutes .
Now , I'm gonna add some bell pepper again .
So on the flame after five that give it a good doss .
No .
Mhm .
At this stage , I'm also gonna add a handful of some du du du add some mushrooms that have been sliced up like this .
You can see that everything is really loud and hearing here in the pan , mushrooms have also cooked all on a high flame quickly .
Now , add the chicken into this was , I've taken the flame down to dough now and you can just see that the veggies are perfectly cooked .
This is what you call Al Dante while cooking the pasta .
When you cook pasta here they've still got a bite to it .
You can see that the broccoli has become bright cream because it's been cooked perfectly flame is on dough and now I'm gonna add the sauce .
Yeah .
And just make sure that our veggies and chickens get coated in this delicious sauce .
Yeah , that's it .
Once the sauce is coated , that's it .
You're done cooking , you can turn off the plate and just serve this up .
Honestly , with this recipe , feel free to use whatever bits of vegetables you have lying at home .
You don't have bell pepper , use carrots , just thinly slice them .
You can't find broccoli .
It's a lockdown .
That's totally understandable .
You know what use some leftover cauliflower that you have at home .
The sauce is so delicious .
It's gonna taste yummy no matter what vegetables you use , feel free to make substitutions .
