Chicken and pineapple curry .
I've got my pan on here with a touch of oil in I'm using the sunflower oil .
You can use anything you want for this dish .
I'm just using a few green cardamons .
I'm not using any big mixture of of , of garam masala or whole seeds .
I'm trying to keep this fairly delicate .
We just need to get them slightly roasted in that oil .
It would just take a few seconds .
Now , what we're gonna do is I'm gonna add what I call the Big Four , which is a chilli powder , cumin powder , coriander powder and turmeric .
Or , if you want , you can just use your your your favourite curry powder , your favourite mixture .
It's entirely up to you .
They were roughly equal parts of the powders .
I'm only making a small amount of this dish .
OK , let's get some onions in there .
A little bit of chopped onion .
I've got some garlic ginger paste there , which is finely chopped ginger and garlic .
Equal parts .
Let's add a little bit of salt .
Now we'll add a little bit more later or certainly taste it later .
Now I'm gonna put my chicken in .
I'm going for some chicken thighs .
They've got the bone in there .
They work really well with it .
They fairly fatty part of the of the chicken .
Slightly darker meat and always nice and juicy .
OK , li on .
I'm gonna cook this for five or six minutes .
Then we'll be back .
Keep an eye on it .
Let's take a look .
Now , that would have sealed the chicken quite nicely .
It's not quite cooked yet .
I'm gonna throw in now .
Just some , uh , sweet pepper green pepper .
Just for a bit of colour .
You can add anyone you like .

Now I've got some coconut milk .
I've got a tin here .
This is about 400 ML .
I'm using about half of it .
So 200 ML for this amount .
Let's get the lid back on that .
We'll cook this just for three or four minutes .
Let's jump in now .
It's looking fantastic .
Let's lower the heat because this has been on a fairly sort of vigorous heat .
I'm gonna get some fresh pineapple in there .
You could use a tin if you wanted .
Fresh is always better .
I've got some fresh coriander Now .
If you wanna add fresh chilli , you can I'm not going to in this dish .
I'm just trying to keep it nice and mild .
We do have the chilli powder in there , so we'll have some bit of a kick but entirely up to you .
How much you want to put in lead back on .
Let's simmer this for about 4 to 5 minutes and it's done .
