Hello and welcome to Masala Trails today .
We're making a very simple chicken curry which you will find practically in every home in Kerala or on street shops or restaurants or everything .
It's literally an everyday basic chicken curry .
So let's just get started .
Take a thick bottomed pan and just put your gas on high flame to this .
Add some coconut oil , just let the oil heat up a little add half a teaspoon of mustard seeds .
Just let it platter , do this .
Add a handful of curry leaves .
I've got four slipped chilies .
I'm gonna add that as well .
An inch of ginger roughly chopped and four cloves of garlic to this .
I'm gonna add three medium sized onions , thinly sliced to this .
I'm going to add some salt to this .
I'm gonna add now half a teaspoon of turmeric , a teaspoon and a half of red chili powder .
And I'm gonna add six teaspoons of coriander powder , give it a good mix and just keep stirring it till the raw smell of the spices goes away to this .
I'm going to add some water just to sort of bind all the spices together to this .
I'm now going to add the chicken .
I've added chicken with bone in it because in my curves , I like chicken which has bone .
But if you prefer boneless , you can add that as well .
Just your cooking time will reduce a little bit .
Just give this a good mix .
So just stir the chicken on really high flame for a good two minutes just so that the side sort of evenly coat the masala .
Before we add the next ingredient , it's important that everything sort of comes together .
The hero of this dish is coriander powder .
So we want to make sure that the chicken is evenly covered in that to this .
I'm gonna add half a cup of coconut milk .
My coconut milk is really thick , which is why I'm going to add half if you're using packaged coconut milk , I suggest you use an entire full cup of it .
Now , just let it rest for maybe 4 to 5 minutes on low flame and the next 4 to 5 minutes , we'll put it on really high flame and keep giving it a good stir .
So my chicken has been resting for 45 minutes in the coconut milk .
I'm gonna just put the gas on really high flame and keep on stirring it .
So my chicken is cooked through completely .
It's also got like a lovely color to the gravy , like it's a dark brown as you can see .
So I'm just gonna switch it off and let it sit for another minute or two before serving it just before serving it .
What you can do is add a little coconut milk on top , a few fresh curry leaves and it's ready to be eaten .
The best way to eat this is with or rice or even doas if you like that .
Um I just like eating it plain as well .
