OK , now .
It's been quite a while since I did a recipe video , so I thought I'd put that right .
So here's a recipe for bread pudding .
Now bread pudding is a solution to a problem of not wanting to waste bread .
So very often in my house , we'll find we've got maybe half a loaf of bread or something left over .
It's not stale or mouldy .
It's perhaps just not as fresh as it was when it was first bought .
And often this will coincide with somebody buying a new loaf of bread .
And , of course , if you've got a new loaf of bread and it's soft and fluffy , you're gonna take a slice out of that bag , aren't you ?
Not from the other one .
So we end up with half a loaf of kind of not quite so fresh bread .
Now you shouldn't feed white bread to ducks .
So what are you gonna do with this ?
Half a loaf of white bread ?
Well , make bread pudding .
That's the answer .
So here's the recipe for bread pudding , so you need about 500 grammes of bread , about half a sliced loaf .
Tear the bread up into little pieces .
This takes a bit of a while , and actually it's easier to do with bread that's gone a little bit stale and stiff .
So put that in a big bowl .
You'll need a big bowl and then add about half a kilo of dried fruit .
Now you can just use raisins .
But this is also a chance to use up odds and ends of dried fruit that you might have in the cupboard half bags of this and that .
So I actually had quite an assortment of odds and ends of fruit in the cupboard , so we ended up with some currents here .
Chopped dates .
We've got some cranberries , mango , and finally , we've got some prunes .
Now these prints will need cutting up , and it's always worth checking prunes to make sure that there isn't a stone lurking inside them .
Because if somebody bites into that and breaks tooth , they won't thank you .
And just for a little bit of extra moisture and flavour , we're gonna peel and core a couple of apples and then chop them up into fine pieces and mix them into , and we're just gonna add the grated outer rind .
That's the zest of one lemon , so we just mix the fruit in with the bread , and then we're gonna take about 100 and 50 grammes of white sugar and mix in maybe two teaspoons full of mixed spice .
Now , this is a mixture of cinnamon , nutmeg , ginger and probably all spice .
You might find this labelled pudding spice .
Then we're gonna take 500 mil of milk and add two eggs and beat that together , and we just pour that over the top of the pieces of bread and fruit .
And finally , 100 grammes of butter , which we just melted in the microwave .
And we'll pour that over the top of the mixture , and now we just mix it and mix it and mix it with a large spoon until it all kind of comes together and the bread starts to break apart and soften .
Now you can .
If you've got clean hands , just get your hands in there and squeeze it and mash it together and just combine the ingredients by hand .
Once that's fully combined , preheat your oven to 100 and 80 C .
Line a big tray with grease paper , pour the mixture in , flatten it down and then bake that in the oven for an hour and a half .
When it's done , it should look nice and golden brown like this , and as soon as it comes out of the oven , Sprinkle about a tablespoon full of demora sugar over the top .
Wait for it to cool a little bit and then cut into generous portions .
Now this can be warm or left to go cold .
It's equally nice either way , so there we go .
That's bread pudding .
Brilliant solution to having leftover bread , and this will keep for several days .
