My name is Carrie and when I was growing up , one of my favorite memories was watching my mom make homemade bread from scratch in the kitchen .
The closest thing I found to the bread she made is making bread in a bread maker .
This is my Ulster bread maker and my wife gave it to me as a birthday present a year ago .
My favorite recipe is the £2 traditional loaf .
So that's what I'll make today .

I live in Salt Lake City which is around 4700 ft in elevation .
So my recipe will be just a bit different from the instructions in the video description .
First step is to take the baking pan from the breadmaker and add the wet ingredients .
The first ingredient is a cup and a half of water .
The instructions call for one in 38 cups of water .
That's lukewarm .
I found that a cup and a half works best for me .
Next is two tablespoons of butter .
What I like to do is soften the butter in the microwave , then add to the baking pan .
That's all the wet ingredients .
So next step is adding the flour , the flour I'm using is bread , flour .
I'm not sure what the difference is between bread , flour and regular enrich flour .
So if someone out there has the answer , please leave me a comment .
What I'll do is take a one cup measuring cup , overfill the cup , tap the sides of the cup to remove the air bubbles , level off the cup with a kitchen knife , then add the cup to the baking pan .
This recipe needs four cups .
After the flour is added , I'll add two tablespoons of dry milk , two tablespoons of sugar and finally two teaspoons of salt .
The last step is adding the yeast .
This is fast rising bread machine , yeast .
And before I add the yeast , I'll make a well in the top of the flour .
The recipe calls for two and a quarter teaspoons of yeast .
But at my elevation , I found that just under 1.5 teaspoons works best .
If I add more than that , the dough rise is too high has air pockets and tries to push open the lid of the bread machine with the yeast added .
I'll snap the baking pan into the bread maker and select the dark setting for the bread .
Remember that medium crust is the default setting when you plug in the breadmaker .
Next , I'll push the start button and the bread maker starts needing the dough .
Now , I'm just three hours and 25 minutes away from some delicious hot bread .
When the bread making cycle reaches three hours and 18 minutes , the breadmaker pauses and this is where I'll check the moisture level of the dough .
Notice that the dough isn't smooth and round .
It shows flakes and hasn't picked up all the flour in the bottom of the pan .
When the breadmaker starts kneading again , I'll add a few splashes of water until the dough has picked up all the flour and begins to show a smooth texture .
After that , I'll close the lid and let the breadmaker work its magic .
I have tried the quick and express baked features on the bread maker without much success .
These settings make the bread in about half the time , but I found that the bread tends to be a lot more dense .
The crust is a lot darker and the loaf is about half the size of the loaf that comes out using a regular setting at around one hour left in a cycle .
The bread machine starts baking and fills the kitchen with an incredible smell of baking bread .
The only odor I can think of that's better is the smell of brewing coffee .
When the bread is baked , the breadmaker makes a number of loud beeps that tells me the bread is done .
So I'll push the start button to reset the bread maker .
Next , I'll take an oven mitt and remove the baking pan from the breadmaker .
Shake the bread out and place it on a baking rack to cool at my house .
It's a race to see who gets the first slice of hot bread .
If it's my wife , she likes the first slice with some smart balanced margarine .
If it's my son , he likes the first slice smothered in butter .
And if I get to the slice first , I like to add a liberal amount of miracle whip salad dressing .
So that completes this video of making bread with a bread maker .
