Plain Donabe Rice - Japanese & Donabe Cooking

Hello , welcome to to kitchen today .

I'd like to show you how to make plain rice with .

This is Donna Rice cooker .

This is the authentic Igaya clay pot from Iga Japan .

The pot is made of 1% eagle clay .

The bottom has a very thick porous body and comes with the inner lid which works almost like a pressure cooker and the outside bed with these features , you can make the premium quality rice in very short time uh without even changing the heat level .

Now let's begin here .

The ingredients you need the short grain rice and the water for the rice .

We use a traditional Japanese measurement .

The conversion is actually very easy for one rice cup .

Uh is about three quarters us cup which is about 180 millilitres for each rice cup .

You need about 200 mL of water .

So the rice to water ratio is about 9 to 10 .

But if you prefer the thermos rice , you can adjust the rise to water ratio to close to 1 to 1 .

So it's being cooking .

So the rice is already minced and drained .

So it's uh already minced rice .

So you put the rice into the Donna rice cooker , all of them and you can kind of deliver it nicely .

Then you pour the water so that it's so now the rice and water are combined .

And so you get the rice soaking water for about 20 minutes .

Now , the rice has been soaked in water for about 20 minutes .

So you cover with both lids , you see the inner lid has two holes and the outer lid has one hole .

So you set both lids so that the holes are positioned perpendicular like this .

And then you over the OK .

Now here center and you turn the heat on to about medium high heat level .

I think this is good .

So you set the heat to medium high level and you cook for about 13 to 15 minutes .

Meanwhile , you don't have to change the heat level .

Here is another indicator for rice timing .

Once you see the nice steam starts popping , you can wait for maybe like two minutes and then you turn off the heat .

That's when the rice is ready .

If you want a nice crust on the bottom , you can cook even an extra one minute or two .

Now the rice is ready .

Rice has been rested for 20 minutes .
