Hi , everyone .
This is a welcome to Turkish food recipes .
In this episode , we are making classic home style a Turkish with minced meat and mushrooms .
There are many options for toppings .
We will talk about it later .
It is really fun and easy to make .
So delicious for vegans or any time of the day .
I will also give you some options for the vegans , vegetarians for the dough and I'm sure there are lots of options for the topping too .
So let's get started .
Ok .
First we are going to make the filling .
I have one big onion chopped .
I'm going to saute it as you can see with about three or four tablespoons of olive oil .
And then I'm adding the um green peppers , whatever you have in your region .
This is sweet .
Uh We call it village pepper .
And here I have a 500 g of ground beef .
I'm going to continue to saute until it changes the colors .
And here I'm adding uh one tablespoon tomato paste and half tablespoon uh red paper paste .
And let me mention that uh some of you , most of you probably uh can't find the red pepper paste it is optional .
It gives a nice taste to the dish .
But uh if you don't have , just don't edit .
If you can't find it , that's better to saute them .
I added a little bit of olive oil on top and uh make a , made a valve on the pan so I can heat it easily and saute it .
And then after about one minute , I mixed everything again .
If it's the season , I always like to add some tomato , fresh tomato .
It gives a , a deep taste to the dish .
I chopped it this time , but you can grate it also .
And of course , don't forget to peel it for this recipe , adding some salt and red pepper flakes .
Uh You can also add a black pepper or other spices if you like .
And as the last ingredient , I added some chopped mushrooms .
It is about a handful .
Let's say it gives a nice taste .
It is also optional , but I prefer this time just cook it until the all the vegetables are soft and turn off the heat for the dough .
Here , I have one cup of liquor water , edit one tablespoon dry yeast and one tablespoon sugar .
And after it is foamy , which means it is activated in five minutes .
I edit one cup mix of milk and yogurt mixture , just heat the milk a little bit .
So it is liquior four tablespoon olive oil and about six cups or more all purpose flour don't eat all at once , just enough to make a smooth playable and sticky dough .
Of course , we have salt too about uh one teaspoon .
My teaspoons are for are Turkish tea .
So they are smaller .
But uh I always tell you the measurements for the universal teaspoon .
So I added more flour if I need it .
It takes about uh 6.5 cups of all purpose flour .
Maybe a little more .
As you can see , it is still a little bit sticky but not too much because we will work it when we are shaping it with the flowers .
So don't make it too hard and let it rice , cover the dough and let it rice until it is doubled for about one hour .
I'm going to Sprinkle some flour over the countertop and take my doll .
As you can see it is , is still is sticky .
Try to use not too much flour just as much as needed .
I'm going to cut it to 10 pieces .
9 10 .
Uh you , you can make it smaller if you like , but if you make it bigger , it will be uh less work for you and just shape it to a ball .
OK ?
Everything is ready .
Now , we can begin to shape our P D again .
Sprinkle some flour and with the rolling pin , roll out the dough to a long oval shape .
You can uh flip it from time to time to check if it sticks or not .
And of course , don't make it longer than your baking tray .
And now I can add the filling on the top , mix it a little bit .
So the sauce is even and put it generously without going too much on the sides because we're gonna fold it now and to give the classic shape , just seal the edges and fold the sides as you can see on the screen and quickly but gently transfer the to the baking tray .
It is better if you use a baking paper under it .
But you can uh Sprinkle or a coarse cornmeal too .
I'm just going to continue to make the same steps to other pieces .
Let me show you one more time closely how I shape it and talk about the fillings .
Uh We have a cheese filled .
This one is minced meat , but we have also a very tiny chopped meat filling .
You can also make it with a spinach filling .
Let me give you some options for the doll .
Uh This one is I shared in the channel about uh five years ago and I used a egg in it which makes it uh richer tall .
You can try .
Uh Also if you are vegetarian , you can omit the eggs and uh also do yogurt and milk instead just use plain water or if you have another options .
When you are making your dough , you can try with it too .
In that video , I also made it a bit minced meat feeling but before I put it in the oven , I sprinkled some grated cheese .
You can use a or mozzarella in and two others .
I just whisk some egg and pour over them .
You can also uh crack one egg a whole and like sunny side egg um under cooked before you take out from the oven , like five minutes before and enjoy your .
So these are the options .

And here are the baked .
I baked them .
It's a 200 Celsius degree preheated oven until it is golden color on top and bottom .
They are still very hot .
Now , I'm going to uh put them together and cover and uh let it wait for five minutes .
So they get softened a bit and here is the second tray .
Uh I bake them together , but you might need to change from top to bottom alternately because they don't bake it evenly .
Depends on your oven .
If you are going to eat it right away , which is the best option .
Just butter the sides of the to soften a little and give it an extra taste .
But if you are not going to eat it right away , make sure you put them together and maybe cover with the other pan .
So they don't dry out and the sides of the pita is not too hard .
