I'm excited to show you one of our favorite eggplant dish at home .
It has egg plant base , mixed with yogurt and topped with delicious ground meat with tomato sauce .
The look and taste is festive yet it is very easy to make .
So let's get started .
I have four eggplants here .
I try to choose for this recipe .
The ones that are thick and soft inside .
I'm going to pick the egg plants in order to not to burst out .
Sometimes it happens and I'm going to green home and it really gives a distinguished taste .
When you grill like this , we call it E S and for this , we have a special pan .
It's , it's very cheap and it conducts the heat uh very easily .
So in no time it begins to cook on top and you just turn it after it cooks about uh after it's soft enough and changes the colors , you turn them and continue to cook until all the sides and inside is soft .
I'm checking them again .
Sometimes the top part that has the stand needs more time to cook .
So be careful with it and check all the parts they're done .
Now , I'm going to let them cool a little bit and then take the flesh out .
Actually , they are still hot .
But I wanted to continue .
If you have time , you can wait , but don't let them sit too much because sometimes they can get dark in color when they wait like this .
As you can see with the help of spoon and the knife , you can get the flesh out easily .

If the eggplant is uh , very juicy and it separates as I'm gonna show you here .
Now , just scoop out some of the juice to make it thicker .
My eggplant base is almost done .
Now , I can begin to cook my meat part .
I have 400 g of ground meat here .
I'm gonna cook it in some butter and olive oil mixture .
I'm using my copper such pan here , but it is ok to use your favorite pan that heats nicely .
I know you like my pan a lot .

I'm gonna cut my peppers .
I gonna use a half red bell pepper and about 23 green peppers .
Uh Let me note that in the original recipe .
A finely cubed meat is used not a ground beef .
And also they don't use a green and red peppers , but ground beef is the easier way to make it .
And it is very common now .
And also I like the taste of peppers I wanted to add .
So either way you can make if you like to eat my way or keep it original .
After I saute the peppers , I added uh about half tablespoon each hot red pepper paste and tomato paste and continue to cook for uh 34 minutes and for the spices , I have ground red pepper , some uh red pepper flakes , black pepper and salt .
That's it to help the mixture soften and to have a little bit more sauce .
I'm adding some hot water and after about five more minutes in low heat , my meat mixture is done to complete my eggplant base .
I'm going to cook some finely chopped garlic in olive oil .
Meanwhile , I'm chopping the , the egg plants finally with a big knife as you can see like a puree .
And I'm going to add the eggplant into the pan and stir everything about for one minute .
Not too much until it is corporated .
You can also add the garlic right to the egg plants without cooking it .
But I prefer to do it this way .
So garlic doesn't smell after eating .
You can do in both versions .
And also this way , I'm going to heat the egg plants again .
And now I'm going to mix it with the plain yogurt .
I'm gonna eat slowly because yogurt is cold .
So it is better to mix it slowly .
So we are ready to serve our , you could serve it directly to the plates .
But at this time to show you , I wanted to serve it to a big plate in the center .
First , the base are smooth and yummy eggplant base .
And on top of that , our meat mixture with the sauce together .
It is really a a delicious deep taste .
You should definitely try it with the whole grilled egg plants , uh yogurt garlic and also delicious uh meat mixture .
