How to Make 5 Cheap and Easy Casseroles _ You Can Cook That _ AllRecipes.com

What's a better crowd pleaser than a casserole .

I've got five cheap and easy casserole dishes to feed your family that won't break the bank .

We'll start out with some family favorites .

You gotta have some good chicken casseroles .

That's probably the most popular and this is one of my favorite .

It is King Ranch chicken casserole .

This recipe starts by making the saucy layer with our favorite canned soups .

This has cream of mushroom and cream of chicken .

We're gonna start by combining those in a bowl along with some Rotel and a little bit of chicken broth .

This recipe calls for two cups of chicken broth .

I like my sauce really thick and rich .

So I'm gonna cut that back to about three quarters of a cup to a cup of broth .

It's really easy to make these sauces from scratch on the stove .

And that's the way I typically do it .

However , the biggest benefit from using the can is how much time it saves the sauce came together in less than a minute .

Now we'll start our layers .

You'll want to lightly grease your casserole dish , place down half of your tortillas and half of your chicken , then we're gonna Sprinkle on top bell pepper and onion .

I'm using a poblano pepper instead of just a green bell pepper .

I think it adds a little more pungency and they're still super cheap on top of our onion and pepper , we're gonna top it with half of our cheese and then on top of that , we'll do half of our sauce .

Then we're gonna go on with more tortillas .

If you need to cut your tortillas to fit to your casserole dish , that's totally ok .

More chicken , more peppers , more sauce and then cheese last .

And then finally , we're gonna give the top a Sprinkle of chili powder and I'm using garlic powder just to add a little bit of punch to that top cheesy layer .

Then we're just gonna bake this at 350 degrees for about 30 to 45 minutes or until everything is golden and bubbly .

Everything in here is already really cooked .

So we just need it to all kind of come together .

Oh my goodness .

This is piping hot and smells amazing .

King Ranch is the king .

Indeed .

Like the saying goes all good things are worth the wait .

So like any good casserole .

We need to wait before we get into it .

You want everything to kind of resettle and come together .

So we'll let it sit for about 10 minutes before we serve it up .

My mouth just started watering .

I love to serve it just like I would enchiladas or something like that with some chopped tomato .

A Sprinkle of cilantro , maybe a little dollop of sour cream and then serve it with some avocado .

Maybe some tortilla chips .

This is so creamy and definitely indulgent .

This has to be one of my favorite Lazy man dinners that you can have .

It's kind of like enjoying an enchilada without all that hard work .

Just one of those things that made me happy .

You definitely need to give the King ranch a try .

Don't blink because this next casserole comes together so fast .

You're not gonna know what happened , but I had to include it because it's one of our most popular .

This is a cheesy chicken and broccoli casserole .

We'll start by combining three cups of cooked chicken with two cups of cooked broccoli .

And I'm actually using about three cups because we like broccoli and any time you can incorporate more veggies .

Why not to that ?

I'm gonna stir in the two cups of cream of chicken .

There's plenty of salt in the cream of chicken as well .

So we only need to add some pepper and then we're gonna stir in some sour cream .

Another benefit to using the canned soups .

Not only is it a time saver , but it also can save you money because you don't have to buy the cream and the butter and the flour and whatever seasonings to make this mixture yourself , keeps things easy on vacation .

Casseroles with cream of anything was very popular when I was a kid .

This is definitely something my mom would have made now to take this over the top and add that texture .

You know , for that perfect bite .

We're going to combine 1.5 cups of bread crumbs with some melted butter and Sprinkle that on the top .

Of course , if you wanted to keep this low carb , just leave that off .

This is gonna be so good .

I'm using a panco bread crumb because I love that extra crunch .

It provides this one's gonna bake at 375 degrees until it's all gooey and bubbly .

About 30 to 35 minutes .

Look at this .

This one's definitely a no brainer .

Your family will love it .

You can customize it to your taste .

So bubbly creamy on the inside crunchy on the top .

One delicious thing you could do is serve it over a hot baked potato or just simply with a side salad and maybe some crusty bread or just over regular rice or cauliflower rice .

I just love a good casserole .

To be honest , something like this is really one of my guilty pleasures .

I wish my favorite food was something healthy , but it's just not now that we have nostalgia covered .

Savor him for a more updated casserole .

This next casserole is packed with flavor and if you've got good eaters in your household this is the one to make .

This is a cabbage roll casserole .

I love recipes like this that just take those familiar flavors and then just , you know , creates them in a different way .

This recipe couldn't be easier .

We're gonna start by chopping up some onion and get that in the skillet with some ground beef and just saute it together .

Once our meat and onions are cooked , we're just gonna put everything together .

You wanna drain off any excess grease or anything that was in your ground beef .

And now we're just gonna stir in a cup of rice and into two cans of tomato sauce .

And then I love the flavors of the Mediterranean style um stuffed cabbage rolls .

So I'm going to add in a pinch of all spice .

That's just total preference .

Once we get this all mixed together , I'm gonna stir in about £3 of chopped cabbage .

You know , it all falls apart when you go to eat a cabbage roll anyway .

So why not ?

Just go ahead and make it easy on yourself , just pull off any leaves that are brown or bruised .

Everything else is good to go .

I like to leave as much of the green leaves as possible .

If you have any leftover cabbage from your head of cabbage , it's great to add into a stir fry or to make some coleslaw .

Let's just see if I can get it all .

She's ambitious folks .

She's ambitious .

The cabbage in combination with some beef broth we're gonna add is going to cook that rice because the cabbage is gonna release a lot of water during the cooking process .

I'm gonna go in with this whole mixture .

I have buttered a casserole dish .

We're just gonna go all in and then pour our beef broth right on top .

It's covered .

We're gonna bake for 1 to 1.5 hours at 350 degrees .

We're gonna uncover it during about the last half hour or so .

That is one big delicious casserole .

You can finish this off however you want or serve it with additional vegetables or a salad .

I love continuing that Mediterranean theme and topping it with a little bit of Greek Yogurt or lab and some fresh dill .

You could do parsley , you could squeeze a little lemon over it .

You could do none of that .

Mm mm mm .

If you were blindfolded and took a bite of this , you would say it's a , you wouldn't know that it's all chopped up mixed together as a casserole .

This next casserole is what dreams are made of .

We're combining one of our favorite things ever .

Macaroni and cheese .

That's ultra creamy and rich with French onion soup .

French onion mac and cheese .

It's like a match made in heaven .

I'm gonna thinly slice two large sweet onions .

I also do a combination of butter and oil and then we're just gonna cook it stirring often every five minutes or so .

All the onions cook .

I'm gonna shred up my cheese to keep this somewhat affordable .

I'm just using a regular Swiss cheese instead of the expensive .

And I'm combining that with just some white cheddar .

Once your onions get to that rich , deep brown color , we're gonna add the flavors that are reminiscent of that French onion soup .

So we're gonna deglaze our pan with some beef broth and sherry .

If you don't have sherry , you can just use like a red wine vinegar and then just some fresh thyme , a couple dashes of Worcester Shear salt and pepper .

Oh That smells just like French onion soup .

And that's it .

We're just gonna let this reduce by half till most of that liquid is gone .

And then we'll just set these aside .

Now we're just gonna make our cheese sauce .

So we're just using the same skillet .

It's already got a layer of flavor in there .

And y'all know how to make this .

You could probably do this with your eyes closed .

We're gonna melt half a stick of butter .

Once our butter's melted , we're gonna whisk in our flour and let that cook for a few minutes and then we'll just whisk in our milk after the sauce has simmered for about 5 to 10 minutes , we are going to stir in our cheese .

I preserved about a cup and a half or so for the topping and I'm going in with our blend at this point , you can pretty much just turn the heat off , season it up with a little salt and pepper and then we're gonna stir in our little gold , add the pasta in and then we're gonna pour it into a casserole dish .

Look at that for the topping .

I'm gonna thinly slice some baguette .

You could also just use some panko bread crumbs .

All right .

Once that's on there , now we're just gonna Sprinkle the rest of our cheese and kind of just get it in those little nooks and crannies , throw this in the oven if you're serving this for company or maybe as a side dish next to some delicious steak off the grill .

That would be a very upscale side dish .

Pop it in the oven at 425 degrees until it's all melty and bubbly and golden .

Oh Y'all .

I think I've really outdone myself .

This looks so good .

I'm just gonna finish it off with a little bit of fresh thyme .

Y'all .

It is so creamy .

There is so much flavor just like French onion soup , mixed with mac and cheese .

And that little crunch from the topping .

Creamy mac post crunchy topping equals perfect bite .

If you're looking for the casserole to impress without breaking the bank .

This is the one what's a cheap and easy casserole episode without a cheap and easy breakfast casserole .

This is really an all in one breakfast casserole .

We're talking sausage , gravy , biscuits eggs and cheese all together in one .

And we'll start by making the sausage gravy and we're just gonna get the sausage nice and brown .

And once that happens , we're gonna use the fat that's in there .

We're not gonna drain it and we're gonna add our flour in , that's gonna create the root that's gonna thicken our gravy .

And then we're just gonna cook that flour down a little bit about 1 to 2 minutes and we're gonna stir in our milk about two and a quarter cups .

We're just gonna bring it up to a simmer and that's how you'll see how thick and rich it's gonna be .

And then we'll let it cook for about five minutes .

Season it up with just a little salt and pepper .

There's enough salt really in the sausage .

So you don't need much , even if you're not making the casserole , you could have this kind of breakfast on the table in like about 15 minutes .

The bread component of this casserole is the good old canned biscuit .

Just gonna take these biscuits and quarter them .

We're gonna literally build the whole thing just straight up in our nine by 13 .

You wanna butter it so that nothing really sticks and then straight in with our eggs .

We're just gonna beat them straight in our casserole dish going in with six eggs and just scramble them up right in the casserole dish .

Season it up with a little salt and pepper and now we're just gonna toss our little biscuits straight in .

You figure about a biscuit per person .

So I'd say this casserole serves about eight people .

And then I'm gonna go in with about half of my cheese and then right over all of that with our delicious gravy and then top it with the rest of your cheese .

And then we're gonna bake it at 350 degrees for just about 30 minutes .

This is a thing of beauty .

The gravy in the midst of all these little biscuit bites is just piping hot in the middle .

And then you get that creamy gravy .

This is not gonna be a dried out casserole by any means to freshen it up and make it look pretty .

I like to top it with some fresh chives and then we go in for that good scoop .

It's like creamy cheesy , crusty , yummy .

Uh I'll go ahead and say probably also a little sinful .
