Hi , this is and welcome to get curried a few days back .
I learned this wonderful recipe from a friend of mine , which is a go and chicken curry also known as the chicken roast .
And it was so delicious that at that point of time , I thought I have to share this recipe with all of y'all .
So let's start making the go and chicken roast .
We're going to make a special spice mix for this .
So for that , I'm going to roast a tablespoon of coriander seeds .
I've kept the flame on a low .
I'm using veggie chilies over here .
You can use any which is locally available .
I've taken 10 of them .
Now , after roasting this for a few seconds , I'm going to add a teaspoon of cumin seeds , a tablespoon of sesame seeds , a teaspoon of fennel seeds and we'll roast it further for a few seconds .
We have to add an inch of cinnamon , one black cardamom , one star , one mace , a small piece of nutmeg , four cloves and 10 peppercorns .
And we're going to roast this till all these spices release an aroma .
The spices have released an amazing aroma .
Just let's remove this I'm going to heat a tablespoon of coconut oil .
The oil is hot .
Let's fry one large onion that I have sliced .
I'm going to sort it in till it is soft and translucent .
I'm not gonna brown it too much .
The color of the onion has changed .
I'm going to add one inch of sliced ginger and eight cloves that I have just chopped roughly .
And I'm going to saute this for another minute .
Let's quickly add a cup of fresh coconut that I have grated .
And I'm going to now saute this till this whole mixture is nice and dry and the moisture is really less .
The coconut has also got roasted .
Well , let's shuck the flame , wait for this to cool and grind it along with the roasted spices to a fine paste .
Now , before grinding this mixture , I'm going to add a tablespoon of thick tamin paste to this .
And now we're going to grind it to a fine past .
Let's add some water .
Our coconut and garam masala paste is ready .
Now , let's begin with the curry for the curry .
I'm going to heat three tablespoons of G and now add one onion that we have finely chopped and sort it .
It till it is soft and translucent .
The onion has changed its color .
Let's add a teaspoon of garlic paste , a teaspoon of ginger paste and just sort it till the raw smell goes off .
I have 7 50 g of chicken here .
Let's add it a teaspoon of turmeric to be added in this .
And now let's see , the chicken for 2 to 3 minutes .
Let's add the coconut and spice space to this .
Mix it .
Well , let's add a liter of water to this .
Mhm .
Let's throw in some slit green chilies about three or four of them .
Let's add salt to taste and cover this and cook it on a low flame till the chicken is done .
We left the chicken to cook for almost 20 minutes .
Let's see if it's done .
The chicken is cooked .
We're going to add a cup of coconut milk to this .
Give it a good stir .
Shut the flame , garnish it with some freshly chopped coriander leaves and now let's remove this in a serving bowl and a golden style chicken roast is ready to be served .
You can serve it with rice or chapati prata or even need those sides .
