Chinese Sauce Pasta _ Indo Chinese Pasta Recipe _ Kanak's Kitchen

Hey guys , how are you doing ?

So we have already prepared pasta and tomato sauce , white sauce and also in pink sauce .

But today I'll be showing you this pasta prepared Indo Chinese style with lots of vegetables and sauces in it .

This is quite an easy recipe to follow yet it tastes extremely delicious .

So let's get on to the recipe to prepare this yummy pasta .

We need to boil the pasta first .

So here I've taken the spiral pasta .

This is around 200 g .

That is one packet .

You can use any shaped pasta .

You like next year , I've kept around 7 to 8 cups of water for boiling to which I'm going to add a teaspoon of salt and half a teaspoon of oil .

Mix it well , and let it come to a good boil .

Once it comes to a rolling boil , we'll add in the pasta , mix it a bit and let it boil and cook until it is 80% cooked .

Normally all the pasta packets already have the written instructions as to how and how much time to cook the pasta , depending on the size of the pasta .

Normally this pasta takes around 7 to 8 minutes .

So it's been seven minutes .

It's spoiled enough .

We'll remove one and show you I'll just cut and show you .

It still has some resistance .

And that's the right stage to close the flame as we don't want to over boil the pasta .

So just switch off the flame at this point of time .

And now I'm going to strain it and after straining it immediately pour in some water on top of the pasta to stop the carry over cooking and let it come down to room temperature and then spread it a bit and keep it aside .

So this is how it looks .

It should be slightly undercooked as we are going to cook it further .

Next up in a pan , take two tablespoons of oil once heated , add in a tablespoon of finely chopped ginger and a tablespoon of finely chopped garlic .

Cook it for a while until its rawness goes away .

Next goes in some slid green chilies .

You can put more or less as per your preference .

Next goes in some spring onion .

Whites cook it for a minute or two .

And when it starts to become tender and change its color slightly , then goes in one onion which are cut into cubes or chunks like this followed by one capsicum , which is again cut into cubes .

This way , you can use any different colored bell peppers or capsicum over here to make it more colorful .

Cook it just for a while , say about one minute , we don't want to overcook it as we want to retain its crunch , then goes in two tablespoons of tomato sauce .

Two teaspoons of red chili sauce or paste , whichever you have handy .

Two teaspoons of soy sauce .

Then I'm using one teaspoon of sugar to enhance all its flavors .

One teaspoon of vinegar makes everything very well for a while .

I'm also adding some salt and again mix while the sauces are getting cooked in a separate bowl , we'll take a tablespoon of corn flour or the corn starch to which I'm going to add half a cup of water to make a slurry out of it .

Keep mixing it so that it becomes smooth and free from any kind of lumps .

Now , while adding this corn starch slurry to the vegetables , mix it and let it cook for some time .

Let it come to a good boil first and then cook it over medium flame for another 1 to 2 more minutes until all the sauces are nicely cooked with the slurry and the rawness of the corn starch also goes away .

It's cooked enough and has come to a good pace .

This is how it looks .

I'll show you the texture and the consistency .

It's neither too thick , nor too runny .

So at this stage , we'll add in the pre poli pasta along with some spring onion greens and toss everything really well until all the pasta is properly coated with a flavorful sauce paste .

The pasta looks really nice and separated because we had cooked it until 80% .

Keep tossing it for a while until it's cooked through taking care not to overmix it .

Otherwise you'll end up breaking the pasta .

It's done enough nicely coated and the pasta is also fully cooked .

Now , I'll just show you this is how it looks .

All the pasta looks separated and it's nicely coated with all the flavorful sauces .

Do not overcook .

It just switch off the flame .

It's looking really tempting and colorful you can enjoy with some spring onion greens on top for your snacking or even for your kids stiffen box .
