OATMEAL PANCAKES _ healthy recipe without banana

Hello , my friends , it's Danny .

And today I am showing you how to make easy , healthy , hearty oatmeal pancakes .

Now , many of you really enjoyed my banana oatmeal pancakes .

Thank you for all the positive feedback on those .

I super appreciate it .

And I will of course , link that recipe down in the description box below .

But I also know that many of you just don't like bananas .

So I wanted to create an oatmeal pancake recipe that does not use any bananas and can easily be made vegan as well , which I'm gonna of course show you how to do in this video .

So here's what I'm gonna do .

I grab a nice big bowl and into that bowl goes one cup of old fashioned rolled oats along with one cup of unsweetened almond milk or whatever type of milk you prefer or have on hand .

Let that sit for about 10 minutes because that's gonna give the oats an opportunity to soften a bit .

And this is normally when I would grab the rest of my ingredients .

But today I'm gonna use this time to chat with you .

Now , a lot of times when you're trying to eat better feel better or work towards health and or weight loss goals .

We have this idea that we have to focus on what we need to eliminate or take away from our diets , right ?

It's a how to eat less mentality .

And this approach really creates feelings of restriction and deprivation and it's just not enjoyable nor is it sustainable ?

So instead what I recommend and what has really help to me in my own journey of eating better is to shift that focus to all of the foods that you want to be incorporating into your diet , right ?

So the focus on real whole fresh foods and then having some fun finding ways to get them on your plate and to cook them up .

Not only is this delicious and satisfying and satiating , but it's a lot more enjoyable , which therefore makes it a lot more sustainable .

Now that the oats have had some time to sit and soften a bit , we're ready for some more ingredients and do note all of this is going to be happening in one bowl so we can keep the dishes to a minimum .

So I've got two eggs .

This could also be four egg whites or if you wanted to keep the recipe 100% plant based and vegan , you could sub in a chia or a flax egg .

I recommend only using one as when I tested it myself .

I found two , made it the batter way too thick .

So it's either two whole eggs , four egg whites or one chia or flax egg .

Then I have one tablespoon of melted coconut oil , a teaspoon of vanilla extract and then a tablespoon of maple syrup that's gonna round out and sweeten the batter a bit .

So let's stir that all together .

Get it mixed really well .

And then we're ready for the rest of our dry ingredients starting with two thirds of a cup of oat flour .

If you're not familiar with oat flour , it's simply just ground up oats .

So many grocery stores sell it premade already .

So you could just go to the store and pick up some oat flour or you could simply make them yourself by taking some rolled oats and grinding them up in a coffee grinder , a food processor or a blender .

And just a side note , this recipe also works subbing one for one , a tradition white or whole wheat flour .

And it also works one for one using almond flour .

So it's a very flexible recipe that you can adapt depending on your personal preferences .

Next , I have two teaspoons of baking powder that's gonna help our pancakes get nice and fluffy .

A half , a teaspoon of sea salt and a teaspoon of ground cinnamon .

I'm gonna stir this all together .

Get everything really well incorporated .

And then finally , we're gonna add some stirrings .

I'm adding in a third of a cup of chopped up pecans .

I love the combination of oatmeal and cinnamon and pecans together .

But you can of course , use anything you love in your pancakes .

A few other of our personal favorites are chopped up walnuts , little mini chocolate chips .

Diced up apples and , or diced up pears .

Ok .

So I've got a nice large nonstick skillet heating up over a medium low heat and I'm gonna grease that with a little bit of coconut oil .

So nothing sticks to the pan .

Keep in mind you don't want to use cooking sprays if you're using a nonstick pan because it will ruin the finish on the pan .

Once the pan is heated up , I'm just going to drop the batter in .

I personally prefer a small to medium size pancake .

I usually get anywhere between 3 to 4 in the pan .

You don't want to crowd them , give them a little bit of space and you're gonna see after about two minutes , the pancake is gonna start to set up around the sides just like this .

It'll puff up a bit .

You just want to get right underneath there and flip it over .

You should have this nice , beautiful golden brown color over the top .

Let it go for another minute or two until both sides are golden brown and the pancake is cooked through .

Then you're just gonna repeat that until you work through all of your pancake batter .

Keep in mind if your pancakes are getting too brown on the outside before they're cooking in the middle .

Then you're just gonna wanna turn your heat down a little bit , vice versa if they're cooking through the middle quickly , but they're not getting a nice golden brown on the outside .

Then you just want to turn your heat up a little bit .

Right .

You just want to dance with a little bit until you get them right where you want them .

Now , I love to top these pancakes with a bit of fresh fruit and a drizzle of maple syrup over the top for a more traditional breakfast .

And when I'm in grab and go mode , I will take that pancake , put a shimmer of almond butter over the top and or a little bit of Greek yogurt and keep in mind that these pancakes also work really well for meal prep .

You can make them ahead store them in an airtight container and they will happily live in your fridge for up to five days and up to three months in the freezer .
