Hello , everyone .
Thanks so much for tuning in today on I cook and paint .
I'm gonna show you how to make homemade pasta dough just like your nona would make it .
Plus I'm gonna show you how to roll your dough like a pro as well as how to cut your noodles by hand so that you can be in complete control of their size .
And finally , I'm gonna show you how you can dry your pasta because say you made a little too much .
So it'll last in your pantry for months .
Hey , it's easier than you think so to make the dough , I'm gonna start off with one cup of all purpose flour and I'm gonna make a pretty wide , well , right on the table next , I'm gonna crack two eggs in the center .
Ok .
Now I'm gonna beat the eggs with a fork .
Now I wanna move the flour in so that it turns into a dough .
Now that it's formed a dough , I'm gonna start working with my hands .
If things are looking a little bit dry , just add a few drops of water , need the dough by pushing it with the heel of your hand .
And then pulling it back , do that over and over again until the dough is smooth .
It's gonna take about 10 minutes after 10 minutes .
This is what your dough should look like .
It should be smooth and silky .
So now you'll want to wrap this in plastic and let it rest for 30 minutes .
And here's how it's gonna look after 30 minutes , it's gonna be relaxed .
A little bit sticky and ready to roll .
It's always better to work with pasta in small pieces rather than one big piece .
Any pieces you're not working with .
Now , keep them wrapped up in plastic .
Now , you wanna start off by putting your roller on the widest setting , which is number seven on this machine .
You always want to flour your dough a little bit before rolling it to avoid sticking .
So now I'm gonna put this through two times .
OK ?
So I really want to show you how to roll this dough in one piece .
But to do that , I need for it to be a nicer rectangle shape .
So I'm gonna fold it in half a couple of times this way so that it's a nice rectangle with square corners .
So now I'm gonna put it through two times again this way .
OK ?
So now this time I'm gonna stop right about here and leave about two inches .
Now I'm gonna attach this so that it forms a loop .
I'm gonna bring this piece over and press it down firmly to attach it .
So now I'm gonna roll this through two times again .
Next , I'm gonna go down to number six .
Now , number five , one little tip for doing this is you want to keep the top sheet and the bottom sheet here nice and slack .
If you stay slack , this will go really well for you .
You don't want to pull on that at all or it'll start to taper off right about here and then it'll break .
So just stay nice and slack .
OK .
Now , right here , we're at number two , the second thinnest and I think I'm gonna stop right there .
So I'm gonna lay this down .
Now , you can cut this into sheets and use it for making lasagna or ravioli .
And because it went through in one piece , we're not gonna have a lot of scraps to deal with .
So I'm gonna show you how to cut some noodles .
I'm gonna take one piece and put it over the other .
It's easy enough to cut your noodles with the attachment that sometimes comes with your pasta maker .
But when you cut your noodles by hand , you're in complete control of how wide you want them .
So I have here a double sheet of dough that I just cut into a smaller piece .
And now I'm gonna fold it two times like a book like so and make sure this is really well floured or it will stick and you just cut whatever size noodle you want .
So this here is a fettuccini and fettuccini is perfect for any type of rich cream sauce .
So there you go .
That's how you cut fettuccini .
Ok .
Now , to make Papper Dolly do the exact same thing , just cut them wider .
Whenever I make Pepper dolly , I always have to do this by hand because I don't have the size on my cutter .
And there you go .
Papper Dolly is great for any heavy meat sauce and you can go as thin as you want .
Take it down to spaghetti or even a vermicelli .
This is a great way to use up scraps if you do have any lying around and they're perfect for soups and they dry really quickly before you cook your pasta .
You might want to let it dry for about 15 minutes and then make sure that your boiling water is nice and salty .
If you want to dry your pasta , just Sprinkle some flour onto a baking sheet and lay your noodles out in a single layer .
Try not to have them touch each other too much .
So just lay them out nice and flat .
Flip them over every now and then so that air can circulate .
They're gonna take about 24 to 48 hours to dry completely .
Another way to dry your noodles is to hang them just like laundry .
You can buy a special rack that's made just for this or you can just use anything that's clean when your noodles can break without bending .
That means they're completely dry and they'll last for months in your pantry and that's it .
