These banana pancakes come out perfect .

Plus they're a great early morning surprise for the family .
These pancakes are quick to make so better .
Put the coffee on first first , we'll peel and mash two ripe bananas in a small bowl .
The riper the bananas , the more flavor they'll have .
So this is a perfect use for any overripe bananas you might have sitting on your counter .
A fork will work well for this .
Now , in a medium bowl , combine one cup of flour , one tablespoon of sugar , two teaspoons of baking powder and a quarter teaspoon of salt .
Several all recipes members suggested adding a teaspoon of cinnamon to the flour mixture .
Sounds tasty .
And the flavor would go well together with the bananas .
So let's do it .
Set the flour mixture aside for a minute .
Next crack one egg into a large bowl , stir in one cup of milk , two tablespoons of vegetable oil and the mashed bananas and mix that together .
Now stir the flour mixture into the banana mixture .
Notice how the batter is slightly lumpy .
That's just fine since you don't want to overmix it lightly oil a griddle or skill it and place it over medium high heat when the griddle gets hot .
It's pancake cooking time .
Use about a quarter cup of batter for each pancake .
Cook the pancakes until they're Golden brown on both sides .
Serve the banana pancakes hot with butter and maple syrup .
