How to make Creamy Salted Egg Chicken with Salted Egg Powder

Today , we're taking on guilty pleasures .

This Singapore favorite salted egg chicken is extremely creamy and yummy and delicious .

It's really easy to make at home if you have no instant golden salted egg powder .

Now , I do have the recipe on how to make salted egg chicken from scratch using fresh salted eggs .

Uh Check out that video , but here it's quite easy .

One of my favorite guilty pleasures .

Let's get started .

We will need 550 to 600 g of chicken breast that's been cut into small pieces .

We're gonna add a half a teaspoon of pepper and a half a teaspoon of salt to the chicken .

Mix this .

Well , we're also gonna add one egg .

You wanna mix that really well and set it aside for the batter .

You need half a cup of tapioca starch and the third of a cup of sweet potato starch .

To this .

We're gonna add a half a teaspoon of salt , a half a teaspoon of pepper and half a teaspoon of red pepper flakes .

Once the flour is seasoned , you wanna mix this well with a fork or whisk so that the ingredients are combined thoroughly and here .

As you can see , I have a small wok with oil .

I'm using vegetable oil .

It's getting ready for the deep frying as the oil gets hot .

We're going to add the pe chicken pieces to the flour mixture and coat the pieces very lightly .

Try not to get your flour mixture too clumpy .

Uh , try to use uh as dry hands as possible .

Please wash your hands before you handle the chicken .

So we have coated all our chicken pieces and we leave it over a wire rack so that the excess flour will fall below .

We don't want a heavy uh coated chicken .

So the oil is ready for a deep frying .

Now , we're going to add the chicken piece by piece in small batches .

Don't overcrowd the walk for best results .

Once all the chicken pieces are added , wait about 10 seconds and then you can start to move the chicken pieces around so that they get evenly cooked .

Now , you don't want to cook this too long .

About one minute to 1.5 minutes will do .

The crest will not turn dark in color .

It will stay pale , but it will start to look nice and crispy on the outside .

Remember , do not cook this too long because we're going to cook the cook this again in the salted egg yolk sauce .

So here we're coding our next batch .

And after just about over a minute , we're going to remove the chicken onto a strainer and you can set that aside and continue with your next batch .

Repeat the process till , till all the chicken is fried .

So with that set aside , we can start on our salted egg sauce .

I'm using a nonstick pan , use a nonstick pan or walk for best results to this .

We're gonna add two tablespoons of oil on the side .

I have three tablespoons of minced garlic and Thai chili patties or Thai hot small chili peppers that have been sliced to use this according to taste , we also need a handful of curry leaves .

Although I do like to add a bit more than that as the oil comes to heat , we're going to also add two tablespoons of butter .

This , we're going to add the fresh curry leaves , allow them to pop .

We're going to add the mince garlic along with the Thai chili pepper and saute this lightly .

You don't want the garlic to go brown .

But as soon as it's nice and fragrant , we can add our salted egg powder .

I'm using no salted egg powder , three tablespoons here and once it's added , you wanna stir this very quickly .

Now you'll notice it starts to get kind of foamy .

Uh We're going to add a little bit of oil from the oil that we use for frying to get it even creamier , just a few drops .

And then we're going to add a half a cup to one cup of milk this makes the sauce really creamy in the end .

You're gonna give it , give it a good stir .

If you find that the milk has become too liquidy , just add a few drops of oil again and it makes it nice and foamy and , um , buttery .

So don't wait too long .

We're going to return the fried chicken and we're going to toss this in this sauce to thoroughly coated .

Um , if you find that you don't have enough sauce , you can always add a little bit more milk and that's no problem at all .

The chicken absorbs it and the sauce becomes nice and creamy .

Just give that a good stir and your salted egg chicken is ready .
