today we're looking at pancakes .
I've put together a compilation of some of my favourite recipes and ideas , including these amazing bacon pancakes and these healthy vegan ones , too .
If you want to make thick and fluffy American style pancakes , here's how we're gonna use one egg , 200 grammes of self raising flour , 250 millilitres of milk , one teaspoon of baking powder and a tablespoon of sugar .
Mix the flour , sugar and baking powder together , then break in the egg and give it a good mix .
Keep mixing it slowly and add the milk .
The mixture should be pretty smooth , but don't worry if there's a few lumps , then cut off a knob of butter and heat it in the pan .
You can take any excess melted butter into the mixture and whisk it in .
This will help to make the pancakes nice and rich .
I poured the mixture into a jug , then added some to the pan .
When you start to see air bubbles in the mixture as it's cooking , turn it over and cook the other side .
If you like , you can store your butter in a sauce bottle and keep it in the fridge for another day before you use it .
Give it a good shake , then just squirt it into the pan .
I like to serve my pancakes in a stack with a good splash of maple syrup .
To make thin European style pancakes , mix half a pint of milk together with an egg , then add 100 and 25 grammes of plain flour into a bowl .
Slowly add the milk and egg .
Whisk thoroughly and pour the mixture into a jug .
Then just heat up some oil and cook a nice big pancake .
Once it's cooked on both sides , it's ready to serve .
Add your favourite topping .
I'm using Nutella , and you can roll it up by sliding it between the prongs of a fork , then giving it a twist .
And there we go .
It's ready to serve .
Another cool tip is to actually make the batter inside of a bottle .
Just measure out all your ingredients and tip them in .
Don't forget the egg and the milk , and when it's all in , just screw the lid back on and give it a good shake .
Then it's ready to use .
It saves on washing up a bowl and a whisk and again , it makes it easy to store for another day if you want to get creative .
Once you've made your batter , you can tip half into a sauce bottle .
Then add a tablespoon of drinking chocolate to the remaining batter to make it a darker colour and tip that into a sauce bottle , too .
You can now draw pictures onto your pan , using the two different shades like this and make something really fun .

If you want to make some gluten free , healthy vegan pancakes , here's a great recipe .
Tip one cup of gluten free porridge oats into a blender and blend it up into a fine powder .
When that's done , I added three quarters of a cup of ground hazelnuts , three tablespoons of maple syrup , two teaspoons of cinnamon and a cup of water , Then give it all a blend whilst it's blending , I added two bananas once .
It's a nice smooth mixture it's ready to use .
I'm cooking mine in coconut oil .
Let it melt and pour in the mixture , and if you like , you could add some blueberries .
Once it's cooked on both sides , you can finish it with strawberries and bananas .
And why not add some walnuts if you like , add some maple syrup , too , and if you're really hungry , you can make a stack .
You can make really simple pancakes using just two ingredients .
Start by mashing up a banana into a bowl , then take two eggs .
Whisk them together in a separate bowl , then pour it over the banana and give it all a good mix .
And that's our really simple pancake mixture ready to use .
I made two together on this pan and cooked them as normal .
If you like , you can jazz up the mixture a bit by adding a drop of vanilla extract , some chocolate chips and some crushed nuts .
This adds a bit of flavour and some crunch .
They're really quick to make .
You can experiment with adding different ingredients , too , like blueberries or maybe grated apple .
You can make these really cool bacon pancakes by mixing together the ingredients for your batter while you cook a ration of bacon in a pan .
When it's cooked to your liking , take your butter and pour out a pancake around the bacon .
I'm also drizzling some over the top .
Cook it on both sides and it's ready to serve .
And there's your bacon pancake .
I like a couple together .
You can make delicious cinnamon and chocolate pancakes by adding a heaped teaspoon of ground cinnamon into your mixture when you're making the batter .
If you want a neat cinnamon pancake , cook it just like normal .
And if you like , you can mix some sugar and ground cinnamon to Sprinkle on as a topping .
I'm also drizzling over some syrup , but if you want chocolate instead , once you've poured the batter into the pan , you can squirt in a swirl of chocolate ice cream sauce .
After about a minute , the sauce on mine started melting and running off the batter .
I turned over the pancake to cook the other side , and you can see the chocolate oozing out .
I turned it back over and absorbed the melted chocolate into the pancake .
It doesn't look too great , but it tastes amazing .
You can use a metal cookie cutter to make fun shaped pancakes .
And with this gingerbread man cutter , I used blueberries for eyes .
If you want to toss a pancake first , you need to make sure it's cooked on the underside and slides around smoothly in the pan .
Then you need to quickly push the pan away from you and flick it with your wrist so the pancake slides up the back of the pan and over .
Make sure there's no oil in the pan because you don't want it to splash out and burn you .
It takes a little practise , but it's easy enough .
Have you ever seen one of these ?
It's a kitchen gadget for flipping pancakes .
The idea is you cook seven small pancakes inside these rings , then flip the whole thing over to cook the other side .
It's made of silicon , and it just sits in the pan , but to make sure it sits flat on the base so the mixture doesn't run out underneath before you start though .
Use some butter to grease up the pan and the mould , too .
Then sit it in the pan and fill up the rings with batter after a couple of minutes .
Once the bottom's cooked , flip it over and give it a little shake to release them , and it's actually worked pretty well .
You can tip them out onto a plate , and they're a lovely uniform size .
