Today .
I'm going to show you how to make which are green onion pancakes , but not just any green onion pancakes .
I'm going to show you how to make super flaky green onion pancakes using some tips and tricks .
So with that , let's get cooking for this recipe .
We'll need two cups of all purpose flour .
Now , flour does expire , so make sure you're using a fresh batch .
Otherwise your pancakes will taste stale .
We'll also need 4 to 5 stocks of green onions and Tomio bean is typically made from the top parts of the green onions .
But today I am going to use the full stock because I like the bottom parts too .
We'll also need one teaspoon of kosher salt , three quarters of a cup of boiling water .
And finally I have here some sea salt flakes which will be a nice finishing salt and also a salt to layer in between the pancakes which will give us this nice savory taste .
When we bite into them .
We'll also meet some vegetable oil too .
First in a large mixing bowl , add your all-purpose flour and your kosher salt .
Give that a good mix to mix all the dry ingredients first .
Then we wanna add our hot water up a little bit at a time to slowly fold that in .
Great .
So once everything's been pretty much mixed in , we are ready to start meeting , spread your dough out on a clean , lightly flowered surface and make sure to use a little flour on your hands .
So it doesn't stick , need the dough for 5 to 8 minutes or until smooth and shiny .
It's a good workout when you're done , kneading , roll the dough into a ball and let it sit on the countertop covered with some damp paper towels or a kitchen towel and let it sit covered for at least 30 minutes .
During that 30 minutes .
We're going to let the dough rest before we roll it out .
While we're waiting .
We can go ahead and cut up our green onions .
If you'd like , you can serve your green onion pancakes with some sauce .
I've got a little bit of soy sauce with some black vinegar mixed in with some sliced red chilies .
Now , we'll go ahead and divide the dough into three pieces , set two pieces aside and let's start rolling out the dough .
Using one of the three pieces begin by flattening with the palm of your hand .
Then with the flowered rolling pin , gently roll your dough out , make it as thin as possible .
Aiming for almost paper .
Like now here's the tip for getting flaky layers .
Use my three hand measurement guide .
This is where you roll the dough out so thin , you can put three of your hands side by side to fit on the dough .

Next brush a late coating of vegetable oil , Sprinkle some green onions , add a little bit of sea salt flakes and then carefully roll into a log shape .
When you're done , roll into a cinnamon bun and with the ends , well , just tuck them underneath , then set them aside and let them rest for another 10 minutes .
Ok ?
We will take one pancake just flatten it gently with our hands .
First , we'll want to gently roll this pancake out .
Now , there are gonna be some air bubbles .
So try and work around those .
If you can .
If the air bubbles pop or if the green onions come out , that's fine as well .
We're aiming for two hand widths .
So we don't need to roll it out as big as we had before .
And when you roll it out , try to make sure it's in a circle shape this time .
So hand width , one , two , perfect .
Since I'm only eating two today , I am going to freeze my last pancake .
I've got some parchment paper here .
I'm just going to freeze the pancake between two layers of parchment paper .
And when I want to cook it next time , I'll just take it out of the freezer , let it defrost maybe for about 2 to 3 minutes and then go ahead and put it on the stove just like that .
Now it's time to cook , preheat a nonstick pan on medium heat and brush with a bit of oil .
Then add our pancake brown each side of the pancake for 1 to 2 minutes before flipping .
Then continue to flip and rotate for a total cooking time of 6 to 8 minutes or until done .
Feel free to brush more oil in between flips as needed .
Nearing the end , squeeze your pancake together to create texture and help fluff up those layers .
When you're done , everything should be nice and crisp .
Transfer to a plate to cool slightly before cutting into pieces and serving hot .
