This is broccoli pasta .
Cut 1 large broccoli head into small florets and boil them for 5 minutes in a large pot of salted boiling water .
Then take them out of the water and add them to a large skillet .
Don't throw out the water .
Season the broccoli with extra virgin olive oil , red pepper flakes , and a couple of cloves of grated garlic .
Add 1 ladle spoon of broccoli cooking water , and simmer on medium heat for about 10 minutes .
Or until you can mash them with a fork and make a creamy , dreamy broccoli sauce .
And in the meantime , cook the pasta in the boiling broccoli water .
When the pasta is cooked , reserve 1 cup of pasta water , drain the pasta , add it to the broccoli sauce , add some of the pasta water , freshly ground black pepper , and toss until the broccoli sauce coats every single piece of pasta .
Then serve it on a plate .
