To make the cinnamon , start by combining flour , Dorum wheat flour also known as Fino , sugar , and unsweetened cocoa powder in a large bowl .
Mix well , then gradually add warm water while stirring until you form a dough .
Knead the dough until it becomes soft and elastic .
Cover in plastic wrap and set it aside to rest .
In the meantime , let's prepare the ganache .
Pour the hot cream over the chocolate and mix until smooth .
Let it cool down before using .
Now , let's prepare my secret mix that makes them cinnamon layers fluffy .
In a bowl , cream the butter then combine with fino .
Add the oil while mixing and finally , the baking powder .
Back to the mssimmon .
Dip your hands in oil then divide the dough into small balls about the size of tennis balls .
Place the dough balls on a tray , cover with plastic wrap and let them rest for 10 minutes .
Time to combine all these ingredients together .
Grease your work surface with oil , flatten a dough ball into a circle , flipping the dough occasionally to ensure even spreading .
Spread a teaspoon of the secret mix over the dough circle then add a teaspoon of ganache .
Fold it as you would fold and cement creating a square .
Let them cement squares rest before cooking .
Heat a pan over medium heat .
With the tips of your finger , gently flatten them cinnamon squares , cook them cinnamon on both sides until done .
If some chocolate oozes out , don't worry about it .
Serve warm with a drizzle of honey and more chopped chocolate on top .
