This is eggplant pizza .
Cut the eggplant into discs .
Arrange them on a baking tray lined with parchment paper , then brush them with extra virgin olive oil .
Season them with salt and black pepper .
Roast the eggplants in the oven for about 20 minutes , until golden and fork tender .
In the meantime , make the pizza sauce with tomato passata or tomato puree , extra virgin olive oil , crushed garlic , salt , black pepper , and dried oregano .
Stir well with a spoon .
Now , apply the pizza sauce on top of the eggplant slices .
Spread it with the back of a spoon , then I grated mozzarella or vegan cheese on top .
Now , put them back in the oven with the broiler function for about 3 to 5 minutes until the cheese has fully melted .
Transfer them on a serving platter , add a sprinkle of dried oregano , a few fresh basil leaves .
