This is our chickpea pasta salad .
It's tasty and refreshing .
Add the pasta cooked al dente to a large serving bowl , then add rinsed and drained chickpeas , cherry tomatoes cut in half , diced cucumber , sliced olives , finely chopped shallots or red onion , canned corn , finely chopped parsley .
Then we're gonna make the dressing with extra virgin olive oil , freshly squeezed lemon juice , mustard , maple syrup , ground curing , salt , and black pepper .
Close it and shake it .
Now , pour the dressing over the chickpea pasta salad and toss until the pasta is fully coated in the dressing .
Then to make this dish even more delicious , you can add a diced ripe avocado .
Then transfer it onto a serving platter .
