Let's make birria grilled cheese .
The flavors are so insane and just so delicious .
Authentically , it's made with goat meat , but I'm gonna be using beef chuck roast .
Season your chuck roast with salt and pepper , then give it a good sear on both sides until we get a nice crust .
Chop onions and tomatoes .
In the same pot , add your garlic , onions , tomatoes , and chipotle peppers .
Remove the seeds from the chilies and add them back in , going with your beef broth , spices , and aromatics .
We're just gonna let that simmer until the meat is tender and falling apart .
This should take about 2 hours .
You wanna separate the veggies and blend until smooth , then we're gonna add it back into the pot .
To assemble the grilled cheese , add butter to a skillet , then place down your sourdough , your cheese , add some meat , top it off with some sauce , onions , and cilantro .
I mean , just wow , guys .
This was definitely worth the wait .
