If I do not spill the secrets of the ingredients for Biryani Masala , some of my viewers have threatened to hunt me down and finish me off .
So I think that time has come to protect myself from my biggest fans .
I am recording this show in the last day of 2007 .
And naturally , that brings us to a point where we have to evaluate what happened in 2007 and plan for the new year while we are on the subject .
Let me take this opportunity to wish all my viewers very , very happy New Year 2008 .
I hope that the New Year will be prosperous for you as well as whatever dot com in a million different ways and together all our dreams and goals get realized .
I have certainly enjoyed getting to know you all in 2007 .
It has been an awesome successful and even full year for me when I started this food production studio in September 2007 , I started with a small dream of bringing future his recipes to the web and make Indian food and good eating habits known to a small audience , but to my utter and pleasant surprise in three short months , I'm surprised at the fact that we have broken records across the board .
I look back on 2007 with a lot of joy water dot com .
Brought in about 4 million hits and your encouragement and kind words and emails have driven me to expand my initial plans .
And now there are a few 1000 recipes and more than 120 video demonstrations of recipes on the site in less than three months .
I hope 2008 will be as kind to me as it has been so far as you can imagine producing these shows at this face is certainly an expensive business .
And in 2008 , I am hoping to find ways to supplement revenues .
So as you may have noticed , we have opened up the site so as to keep us going with the same enthusiasm .
But if you have suggestions for increasing appeal , please do not hesitate to write to me and say so .
However , in 2008 , 1 of the biggest and first initiatives is to start a line of high quality dvds that will be available for sale .
The whole idea is to make it available to you at a small cost , some extremely popular dvds that you can see on your large screen .
TV , are in great clarity in your kitchen TV .
We have started the production of dvds that will be available by mid January to 1008 .
Look at it this way you can use these dvds as a gift to yourself .
Your relatives , brother , sister , parents , or even kids , wondering what to cook at college .
Some people live their whole lives with just 10 or 20 dishes , but with whatever and your dvds , I want to expose you to the vast complex array of Indian and other world cuisines .
Trust me , you haven't seen even 1% of the Indian cooking dishes on this site as of yet .
There is so much more to come in 2008 .
I have been talking to a few of my friends and viewers and correspond and respond to males now and then and your views have been mostly encouraging and positive .
Even the criticism has been very constructive and that makes me happy and proud to be associated with your quest for great Indian food .
On this special occasion , I want to share with you a little personal information .
A lot of you are curious about where I live , what I do and why I wear crazy stuff .
And I have avoided to the maximum possible extent , answer these questions because I do not want to take away the focus of this website , which is cool art .
However , I must tell you the truth about the start of this website I did this partly as a labor of love for my little daughter , Shreya .
I wanted to dedicate a lasting place on the world wide web for my child Shreya and to be able to come back and connect with me as she grows because as a father and child share a special relationship .
So for Shreya and all the infant , this site is yours as well .
Finally , many people have expressed fear that they may have to pay to access this site in 2008 .
I want to lay those fears to rest .
Now , my Biryani mafia here is how you can make Biryani masala at home and keep the ready mixture for use instead of buying the powders every time this is an authentic stuff , you can make little variations and you can enjoy this real thing .
So first thing when we talk about biryani , you know , there are various kinds of biryani , the vegetable biryani , meat , biryani , the biryani for lamb chicken , beef , fish , shrimp , for biryani .
There is something we need to add a little extra to make it a little more flavorful .
See while we go , we are going to reshoot a couple of the videos because I want to answer a lot of the questions which I was unable to answer during my first productions with a lot of questions coming from you that is helping me also to be a better teacher of cooking to make this biryani masala .
You need clubs , black cardamom , Javi tree , bay leaf , green , cardamom cinnamon sticks , peppercorns , cri me leaves .
I've got some fried onions .
I've got cumin powder , coriander powder , black cumin dried plants which are also called prunes .
I've got some an agana seeds .
I've got some turmeric .
I've got some chili powder .
I've also got some soft seeds to use fennel seeds when you are making biryani with fish .
If you're making fish , biryani , which are , is showing pretty soon you can use dill leaves that gives a very nice flavor .
If you have noticed each of the ingredients have a purpose , like for example , an Adana , the reason why I'm adding an Adana seeds is it acts as a meat tenderizer , especially if you're using this Biryani masala for marinating the meats like chicken lamb or beef .
You can use an Hanna seeds that will act as a kind of a tenderizer .
So for now , I'm going to teach you basic masala .
So I'm going to remove our fellow seeds away from here to make this Biryani masala .
I've taken around count around 10 piece of clos around the four piece of black cardamom and another 34 piece of mace that is Javi three OK .
And other small 10 peppercorns .
I've got a 10 piece of green cardamom and just four piece of cinnamon sticks , some bay leaf , one teaspoon of uh an seeds , one teaspoon of leaves around uh two tablespoons of fried onion , half a teaspoon of black cumin seeds , two tablespoons of coriander powder , one tablespoon of cumin powder , quarter teaspoon , very little of turmeric powder and half a teaspoon of red chili powder .
Since these are powders , I'm not going to add into this mixing container .
These dried fruits also gives a nice taste to your biryani .
If you want to add , just add it .
I'm going to make a powder of all these ingredients .
Add it here , OK .
Now to this mixture , add quarter teaspoon of turmeric , black cumin seeds , one tablespoon of red chili powder , one tablespoon of cumin powder and two tablespoons of coriander powder , dried fruits , OK ?
And then mix all this ingredients .
One of the main mistakes a lot of people are doing while making the biryani is the amount of this biryani masala to use .
So do your friends to make a very good biryani .
You want the entire attention to go on the meat , not on too much of masala .
So what you do just add three tablespoons of this powder for around one kg of meat .
If you want to increase the hotness of the biryani , add more green chili to the biryani rather than red chili powder or pepper powder .
That way your biryani will look really nice and beautiful and taste extremely good .
And when you're making Biryani , you could also use a few whole spices like cardamom Klauss or cinnamon .
If you want to add , you can use whole clouds .
If you add the fresh home made masala , you don't even need to add that and it tastes extremely good .
And then you can store this mixture in an airtight container and you can use it for a month or two months and it will still taste extremely good .
