This lemon pasta will take you to Sicily or the you pick .
This is a beautiful Mediterranean dish .
Amazing .
I don't wanna see you putting cream like so many other people always put cream .
This does not deserve cream and I show you how it's done creamy without the cream .

Lemon pasta .
It's simplicity at its best .

So we need simple ingredients for two people .
We need 200 g of linguine pasta .
See the lingua shows here is nice , rough .
This is as you can see is not orange , it's almost white means it is a good quality pasta , pasta is the most most important ingredient in this recipe .
Then we have some mint .
That's my choice .
But you can use basil if you don't want mint .

One lemon per person .
Extra virgin olive oil , you can replace with butter .
But I got the Sicilian Way .

This is my addition to this recipe and I think it's so important .
I put Pecorino everywhere .
My next challenge is to put Pecorino in coffee .

First thing to do , boil the pasta .
So what we do is we get one tablespoon of rock salt put it in boiling water .
OK ?
The pasta packet says to cook the pasta for 12 minutes .
I I'm going to cook it for two minutes less 10 minutes .
Why ?
Because I'm cooking the last two minutes in the sauce pan .
Here we go see you in 10 minutes .

Two minutes less than the pasta packet .
Lemons , the main ingredients OK ?
What we do is we want to get the lemon zest .
OK ?
We wanna get as much lemon zest as possible because it's gonna make a difference .
Oh Love the flavors sauce .
Lemon .
Just love it .
I would say the zest from one lemon is more than enough for two people .

But if you love lemon so much that you want more , just go for more .
Nobody stopping you the more lemon , the better .
We got plenty of zest for the sauce and now we can cut the lemon in enough and get the juice .
We want to get the juice out of this lemon .
Try to get as much as you can .
Please get everything .
Just get as , as much as you can .
Now we go with the second lemon which we are going to use at this .
Later on that you put it there , the pasta is almost ready .
What we do is we're gonna put the extra virgin olive oil about four tablespoons .
Just be generous .
Like I said you can use butter if you want butter .
But this is the best Mediterranean way .
To make this dish .
Now , what we want to do is we want to add the lemon zest and half of glass of lemon juice just off the glass .
OK ?
That's in there .
You want all these flavors to make love together .
At the same time , we're going to break some mint in there .
OK ?
Just to keep the flavor to our base , a little bit of mint .
And now I'm also going to use see the lemon that we took the zest off .

I want all the water to evaporate .

What we do now is we're gonna add the pecorino cheese .

This is not a catch of paper , don't forget , but the pecorino is so important .
The pecorino is gonna help to make it creamier .
