Hey guys , welcome back to another episode from my kitchen .
What comes to your mind when I say coffee for me , it's such an emotional thing I connect to and I really mean it , I can't stress enough how much a good coffee means to me to start my day .
It's just not any coffee .
It's that typical South Indian filter , coffee or coffee .
And yes , I do have an alternative method even for those who don't own a filter coffee press .

This is ground coffee beans powder , 80% coffee and 20% chicory .
You can adjust the percentage depending on how intense you want your coffee to be .
Now , let's take a look at this South Indian filter coffee press .
It also comes in stainless steel .
This is a traditional brass coffee filter , either one is fine , this has four parts .
The base is the decoction collector decoction is the concentrate of coffee , which is what determines the flavor of your end product , which is gonna be your filter coffee , the upper part has holes and this is where you put the coffee powder and the decoction drips through .
This is the plunger used to press the coffee powder .
This will allow the water to seep in slowly through the coffee powder to get a concentrated decoction .
And of course , the lid to arrest the aroma of the coffee and also retains the heat .
So I'm adding some coffee powder , approximately three heaped tablespoons .
Now press it with the plunger to remove any air pockets .
So that when we add water , it doesn't just pass through quickly .
Don't press it too hard , either mildly tap it once or twice and leave it over the powder , place it aside .
So now we need hot water .
Here's my first tip to get that awesome hue to that uh filter coffee which you get in the hotels and this is just for those coffee lovers for this .
I'm adding a teaspoon of sugar to a pot and letting it caramelize .
Just let it be do not stir it .
It starts changing color .
This step of caramelizing is completely optional .
You could just add regular plain hot water .
I will show this in the second method of making coffee without filter when it becomes brown .
This is when you add some water as a caution , be very careful while adding water , allow it to come to a boil .
Not exactly boil , but it has to start bubbling once water just starts bubbling and just before it starts to boil is when you need to turn off the heat and add it to the upper compartment where we have added our coffee powder .
Now , cover it with a lid , place it aside , make sure to hold it at the base as the upper compartment will be hot .
It takes about 20 minutes for the decoction to drip to the lower compartment .
It's been 20 minutes .
Now , our decoction should be done and ready .
Let's have a look .
Wow .
What an aroma ?
My kitchen is filled with coffee aroma .
Now it's time to heat up some milk .
I'm adding in full fat milk allow this to heat on .
Roll , boil in the meantime , let's add sugar and add in some of the decoction .
Add as much or as less to your preference .
Sugar is personal preference .
So adjust to your taste .
What I'm using here is a traditional way to drink South Indian filter coffee .
This is called a Dara Tumbler , a combination of a cup and a glass , but you can use any normal cup .
Pour it back and forth between the Debra and Tumbler .
This process also mixes the sugar and aerates the decoction to get that nice froth .
Add in some milk .
Look at the froth .
I like my coffee straw but you can always adjust your preference .
Let's just top it with a little decoction and look at that gorgeous color .
Trust me , there's nothing to beat this coffee for a true coffee lover .
I don't know how far this is true but adding a teaspoon of raw fresh milk to the coffee just before serving .
Supposed to take the coffee to the next level .
I have never tried it though .
Now let me show you a very quick alternate method for those who don't own a South Indian filter , coffee press , add coffee powder to a bowl .
Now add in some hot plain water .
This time , I'm using just plain water cover immediately with the lid .
After about 30 seconds , give it a nice mix and cover it again .
This mixing prevents the powder to float above the water .
Let it rest for a minute or two to get clear decoction .
Run it through a thief or a Muslim cloth and use the rest of the process remains the same .
It's absolutely different from any of the instant coffees you get anywhere in the world .
Do you see the difference in color ?
Adding a pinch of instant coffee powder is another way to get that color .
Oh my gosh .
Look at that in today's time when there are coffee shops in every look at corner , in my opinion , nothing to be traditional ethnic coffee .
