I don't know about you but Crepes can sound a little intimidating .
What if I told you that you can make them using pancake mix ?

It is Carly here and you are officially cooking with Carly today .
Crepes Crepes made of pancake mix of all things .
These are easy tasty and I bet you already have pancake mix in your pantry that you can use .
This is one of the most popular recipes on my website .
You can get there from Google really easy or there's a link in the description below .
So you can make these crepes at your house too .
What we have here is just regular old pancake mix .
One cup of pancake mix .
This is just pancake mix that I got from Sam's Club .
Just add water kind .
Most all pancake mixes will work for this though .
We've got milk and egg and some vanilla .
Now let's talk about this vanilla for a second .
Crepes can be both sweet and savory .
I prefer the sweet kind of crepes , you know , filled with whipped cream and fruit or peanut butter , bananas or nutella , things like that .
But savory crepes can also be extremely delicious , filled with scrambled eggs , diced ham , sour cream , salsa , things like that .
So if you are planning on using these for savory crepes , you can skip that .
Vanilla crepe batter is like pancake batter , but extremely thin .
We need the crepe batter to be liquidy so that those crepes are just paper thin when we cook them up and guess what ?
You don't even need any special equipment for this .
You don't need that fancy crepe maker that you dip in the batter that you probably used in home class in middle school .
Like I did , we're just going to do this on the stovetop with a regular frying pan .
Let's get to mixing together our batter .
So like I said , one cup of pancake mix here , we have 1.5 cups of milk .
It doesn't matter if you have skim milk , 1% 2% whole milk doesn't matter for this recipe .
Just milk .
And we're going to whisk this slightly and then we're going to add our egg and vanilla in .
I'm going to add in the vanilla and the egg and whisk this until there are no more lumps .
I have a garbage right there .
I didn't just throw it on the floor .
Your batter will probably feel pretty thin until you add in that egg and it will give a lot more volume to your batter .
You should definitely feel like you're whisking through something and not just water .
It should be slightly thicker than water .
Now that our batter is all , there's still lumps in here .
Hold on .
I gotta go and bring out the big guns .
If there are persistent lumps , bring out the big guns or , I mean , you could do this from the get go .
That might be easier .
Now that our batter is ready .
Let's go over to the stovetop and we will cook these up before we go over there though .
Let's talk about our crepe size and pan size however large you want your crepes , that's the size of pan you're going to want , I'm going to use a medium skillet over there and probably about an eighth of a cup to have a cup of batter .
Let's head on over .
First thing we need to do is turn our stovetop on .
We want a medium high heat and we're just going to let our pan heat until it is hot .
I do want to warn you though .
First crepe is always ugly .
It never works out that great .
I don't know why , but be persistent .
Keep going .
Second , crepe will be great .
First , crepe is always just kind of a dud .
So once this heats up , we're going to spray with a nonstick spray and then we're going to pour about an eighth of a cup of batter into the pan and then quickly lift up the pan and swirl it around to cover the bottom of the pan .
And then we're going to let it sit and cook until those edges start to curl up and come off of the pan and then we can transfer to our plate .
And the crepe is done .
It's important to spray your pan with nonstick spray in between every single crepe to make sure that they don't stick .
So we're going to get about our eighth of a cup here .
Pour it into the middle and quickly swirl to cover the bottom of the pan .
You don't even have to flip these crates .
So as soon as that bottom is done , there will have been enough heat coming through the crepe to cook the top .
So when it's no longer glossy , it's cooked and you can just pull it right off and onto your plate .
And we are just going to repeat this process until all of our crate batter is gone .
It looks like my pan might be slightly hot because if you can see on this one , there's a lot of bubbles that go all the way through .
So I just turned my heat down as tad and our next crepes will probably be looking a little bit better .
You can use a spatula to loosen up these sides to help you and pull it off and onto your plate to stack and wait until you can eat them .
