How to make Whipped Cream for Cake Decorating

I uploaded it a while ago and I had some issues with it .

So I decided to take it down and to record the audio again and to upload it again .

Besides , I still get a lot of questions about the whipped cream that I use , how I prepare it where I get it and stuff .

So I'm gonna try and answer those questions for you guys today .

I use two kinds of whipped cream .

This one and this one both are non dairy whipped creams .

I use the first one to cover my cakes and the other one for all the details on the cake like the burgers and flowers .

So let me show you the process of whipping my cream .

It's actually very simple .

I'll be whipping up one cup of this cream which is enough to cover a double layer , eight inch cake .

So first of all , make sure your cream is cold .

I'm eating the cream on the medium speed .

So the slower you whip your cream , the less air bubbles you will find in your cream .

And if you whip your cream on high speed , you will probably have a lot of air bubbles in your cream , which will make it harder for you to get a smooth finish on your cake .

So I find whipping it on medium speed is perfect for most of my cakes here and there .

I might lower my speed a little when I have a special cake to make that I want really smooth like a wedding cake .

So this cream takes about 15 to 20 minutes to whip if you whip it on medium speed and if you whip it on high speed , it will take even less .

You want to whip the cream until thick and fluffy and you will know that it's ready once you lift the whisk and the cream sticks to it , even when you try to remove it .

And even if you'd whip it a little firmer than I have here , it will still work great .

Just be careful not to over whip it .

I always use this cream to cover my cakes because I find it easier to smooth out my cakes with this cream as this one doesn't per up more with time and that just gives me more time to work with it and get my cakes really smooth .

Unlike the other one , which tends to thicken up some more as time passes .

Both of the creams that I'm using are non dairy whipped creams .

So make sure you're using a non dairy whipped cream as those are the ones that firm up and the others don't .

So for this one , I usually don't measure how much I whip up .

It depends on what I'm making .

It won't take you long to figure out how much cream you need for certain things .

And you can also whip this cream with a stand mixer .

But I like to use my hand mixer as it takes such a short time for the cream to become firm and fluffy .

And this way , I can make sure I get it to the consistency .

I want it in just like the other one .

If you want the cream really smooth , whip it on a lower speed .

This cream whips up a lot faster than the other one .

So you need to be more careful here and to not over whip it .

Once it starts to become fluffy and thicker , you can easily try out if it's the right consistency using your whisk when the cream starts sticking to the whisk , but still slowly folds back into the bowl , you know , it will soon be ready and then once the cream stays completely on the whisk and does not fall off and has those firm peaks .

You know , it's completely ready .

You want to be really careful not to over whip this cream since it does thicken up quite fast .

So just make sure you keep a close eye on it and hopefully with a few practices , you will get it just right .

If you do over whip it slightly , you can just take about a spoon fold .

Sometimes a little more of your un whipped cream and add that to your slightly over whipped cream and just gently fold it in with a spoon .

I don't need to add anything to these creams .

They're already sweetened and everything is added to keep them stable .

And I also just want to say that if you can't get the same brand of whipped cream that I'm using .

Um , try finding another non dairy whipped cream .

I know the ones that I'm using are not available everywhere and I've gotten a lot of messages and comments about where I get my whipped cream and I can get them at any local grocery stores here .

So if you're living wherever I am living , I'm sure you can too .

But if you're living somewhere else in the world , I know it's not available everywhere .

So any other brand will do as well .

Just try different brands of non dairy whipped cream and then use whatever works best for you .
