On today's video .
I'm gonna show you how to make a very popular barbecue side item .
The pickled red onion .

All right .
So let's get started on the pickled red onions .
So I'm starting with two medium red onions and I'm just gonna cut the ends off the root and the stem .
Then I'm going to cut it in half and believe it or not , there is a trick on how to properly slice your red onions .
All right .
So once you've got your onion cut in half again , we have the root and the stem on this side .
You wanna slice in this direction right here .
OK .
Really nice and thin slices .
Now you can cut these pretty thick or pretty thin .
I kind of go somewhere in between .
Now , I know that I mentioned that this is a very popular side item for barbecue , but quite honestly , this side item is perfect on just about anything .
Tacos fish , tacos , tacos barbecue , you name it even with your breakfast when you're having eggs , man .
A little bit of these red pickled onions are fantastic .
All right .
So , I've got the red onions all diced up .
I'm just gonna put them in this colander and I do have the Colander sit inside a pan because I'm gonna pour some hot water in there and these onions are gonna sit in that hot water for just about a minute and a half .
Ok .
All right .
So , I've got the onions inside the Colander .
Just gonna pour some really hot water over the onions .
And thank you , Miss Booger for these potholders , homemade potholders .
All right .
So , just stir your onions in there .
Just gonna move these aside for one minute .
All right .
For this next step .
I have 1.5 cups of hot water and I'm also gonna add 1.5 cups of vinegar .
Just white vinegar .
OK ?
Pour that in there .
I've got two tablespoons of Kosher salt and two tablespoons of sugar .
Give this a good mix .
All right .
That stirred up enough .
So our onions have been sitting in the water for about a minute and a half .
OK ?
I've got my mason jars right here .
Just gonna lift up my calendar .
Now , putting the red onions in the hot water is really gonna remove some of that oniony flavor .
Now , if you like it , just leave it in there for about 30 seconds or don't leave it in the hot water at all , you can put it directly into the mason jar .
All right .
So I've got my onions just gonna evenly distribute the onions into three different mason jars because I'm making three different styles of pickled red onions .
All right .
So I have a couple of jalapenos here .
Just gonna cut some quick rings .
Right .
So , on one of these jars , I'm gonna add the sliced jalape Os , on the other jar , I'm adding a tablespoon of crushed red pepper .
And on the third jar , I'm adding some peppercorn , whole peppercorns about a tablespoon , right ?
So we got our brining solution right here .
Just go ahead and fill up the jars .
Really simple recipe .
I tell you and so delicious .
Look at that perfect .
Every time I just gonna cover these up real quick .
Give them all a really good shake , right ?
So there you have it pickled red onions three different ways with jalapenos , crushed red pepper .
Look at that and whole peppercorns .
So what you wanna do at this point is let them sit in your fridge overnight before you plan on eating up .
Let's give them a taste , right ?
Let's give these pickled red onions a try .
Now I made these about a week ago and these actually have peppercorns and crushed red pepper .
So these are gonna be delicious .
Now , there's a guy out there from Louisiana that likes to put things on crackers , dude , if you know who I'm talking about , but we're in Texas and we put things on to .
So I'm gonna try these pickled red onions on a tortilla chip .
