Today's special recipe is cusa .
Now , this was a much requested recipe from many of you guys .
So I decided to make this today .
Now , this is a plain biryani uh without any meat or vegetables , nothing in it .
So let's get started and check out the ingredients before I start preparing the masala for the cusa .
I'm gonna soak one cup of Parma rice in water .
We're gonna soak this for about 30 minutes .
So first I'm gonna make a masala paste for the for this .
I'm going to roast a few ingredients a little g starting with cinnamon cloves .
Cardamom maize , grate some nutmeg to this .
I'm gonna add some shallots about 6 to 7 cloves of garlic .
A piece of ginger chopped , add four green chilies .
Next , I'm gonna add a handful of coriander leaves and a few mint leaves roast for about 10 minutes on medium flame .
Turn off the sto cool the mixture and grind it to a nice fine paste .
I'm gonna make a quick Rita for the cusa .
I've sliced a few shallots and one green chili , add a pinch of salt .
Some coriander leaves half cup of curse .
Mhm .
The right is ready .
I'm gonna make the in the pressure cooker .
Add two tablespoons of ge to this .
I'm gonna add whole spices starting with bay leaf star , a few cloves , cardamom , a little bit of stone flour or next .
Add one large onion , finely chopped saute the onions till you get a nice golden brown color .
Now , the onions are nice and golden brown in color .
Now I'm going to add one large tomato , finely chopped .
Next , add half teaspoon of turmeric powder .
Two teaspoons of red chili powder , a teaspoon of salt , one teaspoon of coriander powder .
Now add the masala feast cook the masala till the raw smell goes for about five minutes on medium flame .
The raw smell in the masala has gone .
I'm going to add quite a cup of thick curd .
Now you can check and see if the salt content is ok .
And if you need more , you can just add a little more salt .
So I add the soaked rice into the masala to this .
I'm gonna add 1.5 cups of water .
Now , close the pressure cooker , keep the flame on medium .
Now the steam is coming , I'm gonna place the weight after two whistles turn off the stove , let it sit for about 10 minutes for the pressure to subside .
Then you can open the pressure cooker , garnish it with some fresh chopped coriander leaves .
