Welcome everyone .
I'm Duda with foods 101 .
And today I'm making fried pickles and I am drenching my pickles in a tempura batter .
The tempura batter is made with a half , a cup of all purpose flour .
I have 1.5 teaspoons of corn starch , a half a teaspoon of kosher salt .
And I'm gonna need 3/4 of a cup of saucer water .
Now , this is just the sparkling water over here .
I've got dill pickles .
This is a cup of dill pickles that I've drained and I've got the excess moisture absorbing here under the pickles on paper towel .
So let me show you how we're gonna get the batter together to make the tempura batter to my half a cup of all purpose flour .
I'm going to be adding my corn starch and my kosher salt .
Give this a nice little whisk and the corn starch is going to really lighten up the flour and make this batter just very light and crunchy once it comes out of the vegetable oil because I've got two cups of vegetable oil over here on the stovetop heating on medium heat .
So we'll be ready to dip our pickles into it once we get them coated with our tempura butter .
All right , here's the salsa water and as you can hear it open , it's just a real sparkly water .
As you can see here , all the little bubbles coming up and then we're going to need 3/4 of a cap .
I just make sure I give that a nice little measurement the course of the cap and there it is and see how that's sizzling when it hits the , the flour and the salt and the corn starch .
And these are gonna be so delicious .
All right , I think I've got my batter made .
Now , my favorite way to dip my pickles is with skewers .
These skewers right here , just stick a pickle on the end , give it a nice little coating of the batter and then in the oil it goes .
So follow me over here to the , and I'll show you how to get these fried out and I've just started frying the pickles and as you can see , I just poured them all right here in the bowl and I'm just gonna slowly take my skewer here as you can see and stick my pickle there on the end and dump it into the hot oil that works the easiest for me .
And now back here in the background , I have a pair of tongs that I'm gonna use to get out the pickles once they're fried and this isn't gonna take very long and you wanna make sure that you keep them moving around that way , they're not gonna stick together like those just did .
I'm gonna be very careful when working with your tempura batter because oil can get very , very warm .
So you can see , I've got two I like to work with and these are gonna be absolutely yummy and delicious .
Now , if you're looking for an oil temperature , you don't want your temperature and your oil to be any higher than 375 degrees .
Ok , see how lovely and golden brown this is getting how pretty that is .
And it has this beautiful light and pour a butter on it .
It's just gonna be absolutely delicious .
Crunchy and so yummy .
00 , all right .
I like working in small batches .
Now , if you'd like to just put them all in here at once , that's fine .
But um this is how I like to do it .
All right .
I believe this one's ready to be out and you're gonna fry these for about a minute to two minutes , depending on how nice and golden brown you like your , your batter .
All right , this one is for sure ready to come out and you can see the beautiful golden brown batter on that .
And over here I just have a cookie sheet that I put on top of paper towels .
And that way when I transfer my fried pickles , they'll just all the oil can drain off onto the paper towels .
Now , when you do take your pickles out of the hot oil , you wanna make sure that you let them cool down before you dig into them because let me tell you they'll burn your , your mouth .
You wanna add another batch of pickles and just keep frying them , make sure you move them around so they won't stick together until you have them all fried and I'll come back and I'll show you how I'm gonna plate them up and tell you how they taste .
It is fried pickle haven today .
