And today I'm going to make my grandmother's special recipe .
It's called chicken pickle .
Let's begin .
Pickles are best made in mustard oil .
So the first ingredient that goes in a pan is of course mustard oil , mustard oil generally is a little pungent .
So we need to get the pungency off for this .
We need to smoke this on high heat .
Another quality of smoking , this is , it increases the shelf life of the pickle while that's getting heated up .
Let's make a pickle mix or a spice mix which I'm going to use red or chilies .
Well , these are chilies that kind of give you color and not so much of pungency .
I'm gonna add in coriander seeds along with mustard seeds .
Well , these are again , ingredients that you popularly use in a pickle across the globe .
Reek or followed by peppercorns to increase the sourness .
I'm going to add in raw mango powder , which is popular in India known as Amur to this garam masala followed by ASDA or heel and last but not the least thermo powder .
We need to grind this into a fine powder while a pickle spice is getting ground .
You would have noticed that the mustard oil has begun smoking .
Let's turn the heat off completely and allow this to settle down .
Now to room temperature , let's check the spice mix .
Our spice mix is ready and our oil has also cooled down .
Let's reheat the oil .
Now , once the oil heats up , the first ingredient that goes in are some cloves of garlic .
Well , you can use garlic with skin or without .
That's a complete personal choice .
The next thing that goes in are some curry leaves .
This is followed by boneless pieces of chicken .
In this case , I have specifically used only the breast of a chicken .
Let's cook the chicken on medium flame till it's completely well done .
The chicken pieces are kind of 50% cooked .
Let's add in a pickle spices and along with this , some salt as required , let's give this a good stir and allow the chicken to cook till it's completely done .
This time .
Indian pickles are predominantly vegetarian in origin .
They're made using various vegetables .
Well , to name a few carrots , raw mangoes , lotus stem lots of them .
But very few communities actually keep the tradition of non vegetarian or meat based pickles alive .
Well , this one is one of those with this .
A chicken is done and so is the pickle , let's turn the flame off and allow this to cool down completely or at least to room temperature .
This stays perfectly well , refrigerated for three months , but make sure you use a clean spoon every time you scoop out a spoon of pickle .
