We're gonna make this Biryani the Sri Lankan style .

And today we have our special guest chef .

And today we're gonna make Biryani .

Yes , we're gonna make this Biryani the Sri Lankan style .

And today we have our special guest chef and uh very famous guy .

He's a restaurant , hotel consultant .

He's opened , you know , a lot of restaurants and everything and mainly he's a team manager for the for the team which went and won many medals for India .

So how many medals did we win ?

We won uh totally 16 medals .

16 medals was nearly 11 participated in from Chennai .

Not , not only Chennai , all South India just we participate in the 11 , 11 , 11 of participant and we won 16 medals , four gold and four silver and six Browns and one most outstanding wind coming .

And the team manager .

Excellent .

Do you guys know that we also take part in a sports like competition ?

But here all that happens is cooking and awesome food .

You worked in Sri Lanka for long time and you cook for celebrities .

You cooked for cricket teams and uh you've been most sought after , especially for the Indian cricket team .

And uh yes , actually uh in year 2010 , Mr and Mr after the got married after seven days , they went to Sri Lanka .

It's like a honeymoon like so I went as a chef for the cooking for the , he got very happy .

And after that , I was nearly 2.5 months , I was with the Indian cricket team and the chef for Indian cricket team cooking all the food like very much uh chicken and he like very much country chicken in sea and style country chicken .

He like the sea and powder and was like very much uh seafood .

She like sealing and uh seafood curries .

She also like uh like to eat uh red rice with uh stealing and uh uh country chicken curry today in this chicken biryani .

Let's start .

So what do we , how do we do that ?

Actually , this is uh is a authentic traditional stealing and dish , but I make a little bit fusion .

We're making this , you put chicken .

So cut the chicken pieces slightly smaller the curry powder .

This is riling curry powder , see like green color , lots of curry leaves and cinnamon and these are , this is the ingredients .

Actually we using , we tell them we have got green card among peppercorn , we have got some seeds , cinnamon cumin seeds , curry leaves and a lot of coriander seeds .

So for this , we made this curry powder , fishing some salt .

We put a little bit of coconut oil , coconut oil .

So the ginger garlic instead of the paste , we use ginger garlic finely .

And here we are putting a little bit of coconut me for spicy part .

We are putting a little bit of chili flakes .

So I'm surprised that they don't use much of chili powder , not much chili powder , but they're using , they like very much chili flake , chili flakes little of to mix all of it .

Now we're going to let this rest for some time anyway , we have brined this chicken so it'll be nice and tender .

So no mint leaves in Sri Lankan Bia .

No , we're putting mint leaves but then it's in a final stretch .

So we can keep this aside .

Now , in making this biryani , you said we're going to use coconut oil .

Yes , we had in that , you know , especially I love the Sri Lankan Cinnamon cinnamon .

It's called Cinnamon .

Sri Lanka is one of the major country producing uh cinnamon and they have the most expensive , most expensive and very sweet and very , very nice .

It is very good with uh tea .

You can make masala tea or tea with uh cinnamon cardamom , love peppercorn , fennel , some cumin and nice ginger garlic .

Sort of them .

Green chili green .

We add some love lemon grass flavor .

Yeah , very nice flavor flavor in they calling but in the world where they calling this pan is available only in Asia .

I have added Sri Lankan .

Normally they won't cook the vegetables too much .

Normally 75 80% .

We're putting fresh onions , sliced onions , the onions , very little turmeric .

That should be good enough .

Some more of the chili flakes here .

Coriander powder .

So they don't brown the onions .

They just cook slowly like this .

Yeah .

Juicy we adding Toto .

Now once you have all these onions and the tomatoes is slightly sorted in this .

The marinated with the Sri Lankan special curry powder .

Add the chicken pieces for this .

I add a little bit more uh more of the curry powder can get more flavor coconut milk .

It will give a nice taste and a little bit cast paste .

OK ?

They'll give some kind of body to the chef .

Now we're going to add the rice to the hot water for the rice .

Add a little bit of coconut oil , add salt .

You have to make sure that the water is here .

Also we using this plan leaves actually in Hyderabad cooking also we use water .

It is the same plant of that lemon grass also .

OK .

So this is going to be totally uh very unique flavors of a Biryani for me today .

So because I never had Sri Lankan Biryani , we're going to cook this just like Hyderabadi rice , isn't it ?

So cook the rice till it is like 80% cinnamon .

We'll bring this rice to a bowl .

So here the chicken kind of the curry masala preparation is getting ready and when the rice is ready , we're going to put it on top is it ?

And the chicken will stay at the bottom .

So the rice is almost getting ready .

So you want to squeeze in some lime juice .

Yeah , lime juice .

Now the rice , you know usually they mix the whole thing also and cook , but you're trying the fusion one , isn't it sir ?

So just spread the rice .

This is how we love our Ryan but we're going to get a totally different flavor .

Today .

We , we put a little bit uh fried onion , fried onions .

This is definitely , it's copied from us .

Yeah , a little bit of carrot , a lot of curry leaf chef today fr F cast .

So I'll put another layer and then coriander and finish it off with another layer of rice .

And now make sure that the flame is high at the bottom , pour the rice like this and you will have absolutely perfect for this .

Uh Biyani .

We're putting uh normally in India , we are using saffran for the yellow color and sometimes they are using orange red color for the .

But here we are using a Bii , here we are using color to get the yellow color .

So again , a little more of coconut oil and turmeric and add turmeric .

Once the oil is nicely dissolved , you will use this like the saffron water .

What we use in our Biryani oil is nice and ready .

Harry Potter also look at the steam is already building this one will give that nice color on top , put the lid on and also OK .

OK .

Some gee now you know why the chefs are thin , put the lid on , just wait for 10 minutes , cook it on a medium flame , switch it off and you'll have a perfect Biryani in 10 minutes .

Biryani is getting cooked here .

But chef is got another trick under his leaves , famous fried egg .

They giving the biryani uh fried egg .

So for fried egg , we putting and going to fry on pinch of salt so we can put some pepper on top like this fried egg is become like a very special masala fried egg .

This is going to be on top of the biryani .

The biryani is ready , you know , the rice is done well when the rice kind of curls and look at the colors .

Once you mix this rice , this is the color but we want to go down and get the chicken and look at this nice carrot and everything .

So let me get the chicken pieces .

They are perfectly cook chef .

So we're going to have some of the chicken pieces at the bottom .

This is got such a rich flavor .

I would call this like 100 flavored Biryani Sri Lankan Biryani because it's got very nice aromas .

Special South Indians will just fall in love with this .

The nuts is there everything is there .

We're going to turn it upside down , just put it in a plate , just get it out and then the Biryani will come out perfect , very carefully .

Look at the number of colors .

There is nice orange and all the flavors .

The chicken is also absolutely juicy and perfect .

You guys think Biryani I make is look at the what chef has done 100 flavor nice Biryani Indian fusion Biryani .

Basically the nice aromas and there's egg fried egg and the biryani , lots of curry leaves for skin .
