Today , I'm going to make creamy stove , top mac and cheese .
This is gonna be good .
So for the ingredients , I'm using eight ounces of elbow macaroni .
Here , I have two types of cheese .
You can use any type of cheese .
I'm using eight ounces in today's recipe .
This is a three pepper Colby jack cheese and looking at the ingredients , it has a habanero peppers , smoked chipotle peppers , jalape O and I just think it's a little too spicy for my kid .
So I'm going to offset it with medium cheddar .
Here , I have some butter .
You'll want to use salted butter .
I'm going to add onion powder , smoked paprika into the mix .
And for my cream , I'm going with Mexican table cream .
Here , I have a medium pan , preheated over a low heat .
I'm adding one tablespoon of butter .
I'm gonna melt that down .
And now I'm going to add an eighth of a teaspoon of onion powder , a quarter teaspoon of smoked paprika , just combine and warm it through quickly .
Now I'm going to pour in my Mexican table cream and you could substitute this with heavy cream .
Sometimes I even use evaporated milk .
It's really up to you here .
I have my shredded cheese again .
I'm using eight ounces of that and I'm using five ounces of the medium cheddar to three ounces of that pepper jack cheese .
And I'm just going to melt this down .
Stir it .
Combine it over a low heat until it's smooth and creamy like this .
Now , I'm going to shut off the heat and set aside until I'm ready to use it .
Ok .
So I have my water boiling .
So to the water , you could add salt , but I'm gonna add a tablespoon of chicken boon powder , give that a mix .
Now , I'm going to add my elbow macaroni pasta into the boiling water and I'm going to cook this for about 9 to 11 minutes .
It just depends how you want your pasta to cook .
Once it's cooked .
I'm going to drain the pasta water .
By the way , you'll want to reserve about a half cup of the pasta water .
This is helpful when you want to bring back the macaroni to life after you've mixed it .
Now , I'm going to pour it back into my pot and add my cheese sauce and it did form a skin as it cooled .
So now I'm just going to combine and mix , you can taste it for salt or seasoning and adjust to your preference .
But this is done .

I'm going to add just a little bit of that warmed pasta water with that chicken boon flavoring .
You could also just add extra heavy cream or half and half to make things creamier and bring it back to life before you serve .
So this is done and I'm ready to try , but I was having a little bit of technical difficulty .
So my husband helped me out and now that we're back on track , I'm going to give it a try .
