We've got all our ingredients ready for our mac and cheese .
Loads of cheese .
We've got shredded cheddar and cubed cheddar .
I bought a big 32 ounce block of cheddar , sharp cheddar cheese .
We've also got some shredded mozzarella cause you want to get that cheese pull effect and mozzarella gives you that .
We've got our elbow macaroni butter and flour for our roux .
We've got our seasonings , white pepper , a little dried mustard onion powder and garlic , granulated garlic and our milk .
So let's get to it .
We've got our water boiling on the stove .
Now we are going to heat our milk just a bit .
I'm just gonna heat it in the microwave .
So it's not ice cold when we're making our beam , our water is boiling .
We're gonna add uh macaroni stir it around and cover it .
Don't walk away because if it boils over , you're gonna make a terrible mess .
Just cover it until it comes back to the boil and take the cover off and stir it up to make sure that it's not sticking to the bottom .
So you don't want a big clump of macaroni .
Now , we're going to make our root .
We've got our butter nicely melted .
We're gonna add in our all-purpose flower .
Actually let me get on with .
So I think that's the better tool for this .
We don't want to get this brown .
We just wanna cook the rawness out of the flour , whisk it to get any lumps out .
And I'm using equal parts flour and butter , pour in that warmed milk and just whisk it in and let it simmer and the warm milk helps to keep lumps from forming .
So this roux with the added milk is a beam .
Now I'm going to switch to my wooden spoon and stir in the shredded fetter .
And when you add cheese to a , you get a traditional mona has , uh , I think it's em and ta or cheese like Swiss cheese or grier .
But we're using cheddar as the base of our mac and cheese .
Stir that up till it gets nice and melted .
Look at that .
Isn't that pretty cheesy sauce ?
Now , we're gonna season it .
There's a lot of salt in the cheese .
So we're not adding any salt at this point .
We will use some dried ground mustard and just a teeny pinch .
You just want a hint of it .
A little white pepper .
No , won't come out .
Actually never do what I just did .
Don't shake it directly into the pan because a whole bunch can spill out .
Measure it first .
Then we got a little garlic granulated garlic and a little bit of onion powder .
I'm gonna stir that all around .
Now , we can add our cooked macaroni and we didn't boil it , only boil it for about five minutes .
Not to the full package directions because it's still gonna continue to cook in the oven and we don't want it to be mushy .
Let's get that stirred up .
And at this point , we can turn the heat off .
Now for those chunks of cheese .
I like to mix in a few chunks of cheddar because then you get some nice melted chunks of cheddar cheese when you get a serving , you know , it's not all cheese sauce .
It's some sauce and some chunks .
And I think that's good .
We're gonna stir in half of our mozzarella and that's gonna give uh us our cheese pole .
You'll see what I mean a little bit later and we're just gonna keep it right in this cast iron , uh enamel coated cast iron dutch oven .
We're mixing it and we're gonna bake it right in there .
No need to switch to another pan .
Oh , see , you can see the difference that mozzarella made .
You can see the cheese pool .
Can you see that ?
Yeah , that's what you want and you gotta remember to save some cheese for the top because you gotta have a nice cheesy crust and we're gonna do a mix of cheddar and mozzarella on top .
Mm mm .
Mm .
That's gonna be good .
Then we'll cover it , put it in the oven and it all come together .
All right .
Let's take that cover off .
Oh some cheesy goodness for you .
I'm gonna run that under the broiler and get the top .
Nice and brown .
Mm mm mm mm .
Oh , look at that .
Why let me fix your plate .
Look at that .
So cheesy , creamy .
And it's got chunks of cheese in there .
