Hello , everybody .
I'm Charlie .
And today I'm gonna be showing you how to make New Orleans style shrimp pasta .
This pasta dish is the delicious .
I did hear some that all but man , it is delicious .
It's creamy .
Oh man , it is so good .
And I'm not trying to sit up here and tell people this because I , I want people to , you know what I'm saying ?
Believe me .
But it is very OK .
I'm from New Orleans and I know how to cook .
This recipe is similar to my crawfish pasta recipe but it's a , it's , it's , it's like neck and neck of my crawfish pasta .
It's , it's very good .
You should try it .
I'm telling you .
So today I'm gonna show you step by step on how to make this delicious dish .
So without further ado , let's get started , shall we OK ?
This is all what you're gonna need to make your shrimp pasta and we're gonna get started with our ingredients .
You're gonna need some fresh green onion .
You're going to need some fresh basil .
You're going to need two fresh tomatoes .
Now you can also buy the can of diced tomatoes at your local grocery store , you're gonna need garlic .
Um You can either use the regular fresh garlic or you can buy the garlic in a jar .
Here , I have three examples of three different seasonings that I may be using in this pasta .
And uh this is some example of some seasonings that we use down here in the South , particularly in New Orleans .
We have some Tony Creole seasoning chef Paul Creole seasoning and Creole season .
Now there's other Creole seasons like slap your mama and stuff like that .
So uh we're gonna use that , OK ?
And right here , uh you know , also gonna need £2 of medium sized fresh Louisiana shrimp .
Now , this shrimp is local , this is not imported from China or anything like that .
This is fresh Louisiana shrimp .
And uh during this video , I'm gonna do a brief , brief , brief video on how to peel clean and devein this shrimp .
And I also going to have a full video explaining everything about how you clean peel in vein shrimp entirely .
So there's gonna be a video that I'm gonna post called how to Clean peel in shrimp .
So um before you make this recipe , you might wanna check that video out .
And also with that , you're gonna need some um heavy whipping cream .
This is a 32 fluid ounce of a heavy whipping cream .
You can also use half and half .
You're gonna need some butter , some uh fresh uh grated Parmesan cheese and you're gonna need some angel hair pasta .
Now , you can also use other pastas like , um , bow tie or , um , I ain't gonna say , but you can use your as well if you want to .
And there you have .
Now we're about to start prepping up our seasonings for our shrimp pasta .
Now , first thing we're gonna do is we're gonna chop up our , uh , green onion .
Here I have our basil and what I like to do is I just like to ball it up into a little wrap , tuck it under whatever and just cut it .
Baseball should be fairly easy to cut , you know , and you wanna cut this until it's very , very like minced .
This is how your basil should look after you finish from chopping it up .
As you can see .
It's nice .
It's , uh , looks like spinach a little bit .
That's exactly how you want it just like that .
Here I have two , cloves of garlic .
Now , this garlic is pretty big compared to the ones that you may get from the grocery store .
So , uh , down in the middle , we're gonna move the cocoon .
That's what I call it .
And we're just going to chop this until it's minced .
Now it's time to cut out tomato .
Now , like I said , you don't have to necessarily do this .
You can go buy the , um , you could save time and go buy the canned diced tomatoes at a grocery store but today I'm not doing it , I'm gonna do fresh tomatoes .
So what we're gonna do is we're gonna cut the tomato down the center , cut that like that we want is we want to take all of this out here .
The only thing we want to use is the back .
So we're gonna take all of this out and that's how it's gonna look when you get finished .
We don't want to use the inside .
We just want to use the outside of the tomato only .
So we're gonna do this and we're gonna dice it up and there you have a diced tomatoes .
This is exactly how you want it to look just like this .
Here I have £2 of fresh Louisiana shrimp and let's get started with it .
I want to let you know that we want to keep our shrimp as cold as possible .
So , what I've done is I've got to have a little ice water bath underneath there to keep our shrimp cold .
So what we're going to do is take the head out , put that in a bucket , take the shell from around the shrimp , peel the shell off , starting from the bottom and just work your way on back .
Now we're gonna go ahead and devein our shrimp .
Now , I don't know if you see it or not , but there is a nice dark line going down the back of the shrimp and what we wanna do is gonna take that out .
So what we're gonna do is we're gonna take our knife and we're just gonna cut down the center .
Be careful and wash your hands .
I'm gonna open it up and as you can see there it is and you're gonna pull it out .
All right .
Now , your shrimp has been divine .
Now we're going to rinse our shrimp out and they said you rinse it out with cold water .
And there you have it clean , peeled in shrimp .
Make sure that you save about six shrimps because after this , we're gonna make a little finishing glaze to go on top of our pasta when we're done .
Now that we have our seasonings chopped up and we have our shrimp peel , cleaned and deveined .
Now it's time to go ahead and make our pasta .
Here I have a few cups of water in this pot here .
So , what we're gonna do is now we're gonna go ahead and add our pasta .
And what we're gonna do here is we're gonna , uh , let this come to a ball .
We've been letting our pasta boil for almost about four minutes .
Now , it's gonna take about seven minutes to boil your pasta total .
Now , remember we're not trying to overcook our pasta .
We don't want a gummy pasta .
So we're going to let this ball for about 3 to 4 more minutes .
And after that , we should be done .
Now , at this point , we want to go ahead and start um tasting our pasta .
So I have a little strip here and I'm gonna go ahead and taste that .
Yeah , almost there , almost there .
About two more minutes to do , ok ?
We've been letting that pass the ball for eight minutes .
Now we're gonna wait and try and see if it's done .
Now see if I can catch it .
I got it then .
Oh yeah , it's done .
Here we go and cut your fire off .
And now what we're gonna do is OK .
We're gonna go ahead and strain our pasta now .
Oh , that's hot .
Next , what we're gonna do is we're gonna uh rinse our pasta off with some cold water .
Here I have our pasta cooked and ready to go .
So what we're gonna do is we're gonna let this sit here while we make our delicious shrimp pasta sauce coming up next .
Get ready .
Turn your fire on medium high heat .
So in a large sauce pan , we're gonna add about two heaping spoons of butter .
Make sure that that's all the way melted .
Now that we have our butter melted , now we're gonna add our green onion .
And we're gonna mix this in .
I'm gonna go ahead and saute that for about 2 to 3 minutes .
We've been letting our green onion saute for about a few minutes .
About three minutes .
And it should be a nice little toy looking like color , little golden brown color .
And next , what we're gonna do is we're gonna go ahead and add our fresh basil , our garlic and our tomatoes .
If you find that your fire is a little bit too high , you want to turn it down some .
I'm gonna saute that for about two minutes .
We've been letting this saute for about two minutes .
Now , what we're gonna do is we're gonna go ahead and at our shrimp , which we couldn't peeled and give a , so this is about £2 of shrimp .
So you're gonna go ahead and add that in there and then I'm gonna mix this in , make sure your fire is on a medium high heat .
We're gonna do this .
We're gonna go here and we're gonna cover this and let this simmer for a few minutes , ok ?
We're letting it simmer for about three minutes now .
And now at this point , you can go ahead and you can add your season .
So what I'm gonna do is I'm gonna add a little bit of Tony saur Creole seasoning in there .
Just a little bit .
Not too much until that .
We're gonna add a little bit of chef Paul Seafood magic .
And we're going to mix this in , ok ?
And now what we're gonna do is we're gonna let this simmer for about another 2 to 3 minutes .
Oh , that smells so good .
Oh Jesus man .
We've been letting this um simmer for about 2 to 3 extra minutes .
And now what we're gonna do is we're gonna go ahead and add our heavy whipping cream .
And we're just going to mix this in and what we're gonna do now is we're gonna bring this um to a bowl .
Now , you wanna be careful with boiling cream because once it balls , it foams up and it tends to rise and float over your uh pot .
So you wanna make sure that um you keep a close eye out on this .
Now that we have our pasta sauce at a bowl now , OK ?
And next one we're gonna add is about one third cup of freshly grated Parmesan cheese .
And you can add a bit more if you like , which I'm about to do .
I'm about to go ahead and add a little bit more that will also help with thickening process .
And we're gonna do is we're gonna mix that in or it's gonna give this pasta an extraordinary flavor .
Oh Man .
And now what I'm about to do is I'm about to add a little bit more seasoning , a little bit more Tony sari creole seasoning .
Just add a tad bit more .
Not too much .
We're gonna also add a little bit more of uh seafood magic by Chef Paul .
We gonna add a little bit more of that in there and we're gonna mix this in and what we want to achieve is we want this sauce to thicken .
So that means that we're gonna let it cook down some .
So it may take up to about 10 to 15 minutes to cook for it to cook all the way down .
Make sure your fire is on medium high heat and make sure you keep stirring .
Here we have our shrimp pasta sauce which um , after 10 minutes of boiling , as you can see , it has thickened .
Next step , we're gonna go ahead and we're gonna add a little bit of our pasta into here .
Now , you don't have to , you don't have to do this if you don't want to .
What you could probably do is cut your fire off and set them aside and just put your pasta on the plate and uh then pour it on top and serve it .
But what I'm doing is I'm going ahead and add my um pasta right on in .
So what we're gonna do is we're gonna go ahead and mix this in , just add a little bit at a time until you have everything mixed in .
After a few minutes of letting it settle there , we have it pasta and I'm gonna go ahead and , and , and sneak peek and have a taste of this here .
My fork is clean .
I just got to clean off the thing .
Go ahead and try it out and see .
Mhm Yo , this damn pasta is rolling .
It's like my crawfish pasta , but it's only half shrimp .
Oh Man , this is awesome .
This is delicious .
So now what we're gonna do is I'm gonna go ahead and serve this on a plate and we're gonna make our garnish .
Next and next step is we're going to go ahead and create our garnish .
To make our sauce .
I'm gonna go ahead and add a little butter , OK ?
And go ahead and let that melt down .
Now that we have that melted , we're gonna go ahead and add a little garlic kind of mix that in a little bit .
Make sure your fire is on medium high heat .
If you find that your fire is too high , turn it down .
And next thing we're gonna do is we're gonna add our six shri OK ?
At this point , turn your fire down .
Tell me , you know he , you mean that smells delicious , the smell of garlic and the shrimp .
Oh goodness the butter .
Oh Yeah .
Go ahead and flip that over .
I'm sorry , I got to use my hand , my hand .
Look how beautiful that is .
Look at that .
Look how beautiful .
Oh man , that looks gorgeous .
Look at that .
I'm gonna zoom it in so you can see .
Look at that nice , beautiful color .
Our shrimp are now done .
Now we're gonna go ahead and put it on our serving plate here .
And there you have it , guys .
Shrimp pasta .
Now it is time to eat .
Oh , my goodness .
I can't wait to taste this , man .
Now it's time to take a bite .
It's just good .
Real good .
Oh , my goodness .
It's nice .
It's creamy .
Look at that .
You have eight .
My crawfish Passive .
This is just like that , but it's made with shrimp .
And I'm telling you , you ever been to the jazz festival ?
And you ever ate their Corus , man ?
This dish just like my crawfish pasta dish is very similar to that .
This is real good .
Oh , man , you can taste the shrimp , the garlic , the basil tomatoes all together , the seasoning .
Let's go .
Now , who will troubleshoot ?
Ok , because I want to address something um , for my craw crawfish pasta video , I would like to thank Melanie for leaving this comment .
She had noted that , um , that when she had got done cooking her food , she had noticed that there was a lot of grease build up at the , at the bottom of a boat .
Now , as you can see in this , I cooked this over an hour ago and as you can see , there's little to no grease build up in this .
Um , there shouldn't be any grease build up whatsoever because I added a lot of cream to it and I added about two tablespoons about two heaping spoons of butter .
So it wasn't a whole lot of butter I added .
So the crawfish passed the video .
The problem was that all should be solved .
Now , if you do happen that to find out that you're , you're um that you're having a lot of all build up the next time you make the recipe , just add about a tablespoon of butter .
And that's it .
The more butter you add , the more greasier it will become OK .
So light on the button .
But other than that , this recipe is delicious .
I I want you to try it .
Um when you make it , if you want to change something about it , change it , make it your own .
That's why I made this for you to try it on y'all .
And just , you know , work with it , you know , just don't add no seasonal and stuff like that .
You , you add the same exact ingredients but you , if you wanna add a little bit more shrimp , you add a little bit more shrimp .
If you don't wanna add something like um if you don't wanna add the Parmesan cheese , you don't have to add that if you don't want to , you know , there's a lot of different things you can do with this .
