You guys , if you wanna learn how to make my easy and delicious chicken and rice , stay tuned .
So , first things first , we're gonna season our clean chicken and I'm just using some salt , some pepper , some onion powder that I've just ran out of some garlic powder .
Some Adobo , which is super good .
If you haven't already tried it , you should try it out and some paprika and I'm just going to use my hands and um mix all of those seasonings up and making sure that it is on every part of that chicken .
All right .
So now that our chicken is nice and seasoned , we're gonna go ahead and start the cooking process .
My cast iron skillet is super hot as you can see , I put in a couple of tablespoons of vegetable oil and we're gonna go ahead and start cooking the chicken .
Now we're not cooking them all the way through at this point .
We just wanna get a brown golden crust on the outside of the chicken .
So we're just cooking them on um both sides for um about 2 to 3 minutes .
All right .
So after a few minutes , we're gonna go ahead and turn our chicken .
Remember we're not cooking them all the way through .
We just want that nice crust and so we're gonna go ahead and cook them for a few minutes on the other side as well .
All right .
So after a few minutes , we're gonna go ahead and take our chicken out of the pan .
All right .
So once you take out your chicken , you wanna go ahead and add in an onion .
I didn't want too much onion .
So I just added like a third of a medium onion and give that a good stir off just for a couple of minutes until your onions start to get soft .
I also added a heaping tablespoon of garlic .
You guys know I love my garlic and gave that a good stir .
Now you don't want to cook it for too long at this point because it will start to burn on you and you do not want that .
So I'm gonna go ahead and add in my rice .
And this is the rice that I'm using .
The success boil in a bag .
It's just parboiled rice and I'm using jasmine rice and I use a total of three bags of rice .
I know you see me only put two there but in a few seconds you'll see me put in , put in another bag .
So we're just gonna go ahead and toast this rice and let that rice kind of soak up the flavors of that onion .
And that garlic and all of the seasonings left over from when we seared our chicken .
So we're gonna go ahead and continue to toast the rice for a few minutes .
Then I added three cups of water .
So now we're gonna season our rice with the same seasonings that we use on our chicken .
You know , the salt , the pepper , the onion powder , garlic powder , and Adobo .
And we're also gonna add in a chicken boon cube , but this chicken boon cube has herbs and spices in it as well .
And we're gonna go ahead and let that come to a simmer until those cubes dissolve .
And then we're gonna put our chicken back into this pan and arranged them like so now we're gonna go ahead and place some foil over the top and put this in a 400 degree oven for 45 minutes .
We're going to keep it covered for the 1st 35 minutes and then remove the cover for the last 10 minutes .
And this is the outcome , you guys , I just sprinkled with a little bit of parsley and look how delicious this meal looks .
You guys and I used one pan , one pan , not a whole bunch of dishes that you have to do after creating this meal .
And as you can see the rice soaked up all of that delicious liquid that we created with those nice seasons .
The chicken is juicy and moist .
Look at that you guys the rice is not mushy at all .
It is very flavorful .
You guys have to give this recipe a try .
It's a super quick weeknight meal that anybody can do .
