Welcome back to my channel .
In today's video , we are going to be making a very tasty and perfectly cooked rice and beans .
So I hope you do stay tuned to the end of this video to learn how to achieve the best and perfectly cooked rice and beans .
So for the ingredients , we need some beans .
And here I have 1.5 cups of beans .
I also have two cups of rice and this is the cup I use to measure it because I know some of you will , will ask me what type of cob I used .
So I used tinned tomato cup to measure it .
I will also be using some um dry fish .
I've washed and de boned the fish .
I will be adding some fried mackerel as well and this is the um liquid stock I got from cooking the fish and this is the oil I use to fry the fish .
So I'm going to be using it for my cooking .
I have a teaspoon of curry powder .
A teaspoon of minced ginger and garlic based a teaspoon of paprika and half a teaspoon of nut .
M I will also be adding some thyme , some seasoning cubes , one tin tomato .
This is the type of tin that I use to measure my rice .
So I will also be adding one onion as well .
One scotch bonnet pepper , two fresh tomatoes and one red bell pepper .
Now , let's get cooking .
So the first thing you want to do is to soak your beans overnight .
My beans have been soaking for 11 hours now .
So I soaked it last night and this is what it looks like the next day after about 11 hours of soaking the beans and it's getting a little bit soft now .
So I'm going to add the beans into a pot and this is the water , it doesn't look good .
So make sure you always soak your beans overnight .
So I'm going to add a good amount of water , cover the pot and place the pot of fire , allow the beans to boil for five minutes before we wash it .
Now , while the beans is boiling , we are going to soak the rice in a hot boiled water , just pour some hot water over the rice and set that aside .
So after five minutes of boiling the beans , I'm going to wash it properly .
And as you can see , the water is still brown .
I don't know why the color is like that , but I always like to go through this process before cooking my beans .
That's where I will ensure that I will not have bloating after eating my beans .
So I'm going to wash the beans um two times with a clean water .
So my beans is sparkly clean now .
Um Yeah , this is what it looks like after washing it , I'm still going to cook the beans .
So now I'm just adding it back into the pot .
I'm going to pour enough water to cover the beans properly and I will cover it and allow it to cook for .
Um , let's say about 98% cooked before I add it together with the rice .
Now , while the beans is cooking , I'm going to blend my peppers and my tomatoes .
So I'm just going to be cutting them into smaller pieces so that it can be easier for my blender to blend .
Now , after cutting the peppers and the tomatoes , I'm going to blend them without adding water to it .
As always , you guys know , I don't add water to my peppers and tomatoes while blending it .
So I'm going to pour the oil .
I use to fry the fish in a big enough pot .
Once the oil heats up , I will add my sliced onion .
Add my one teaspoon of minced ginger and garlic paste it together and add my time .
Just add the quantity you want .
Now , once I've added the time I'm going to go ahead and add the blended peppers and the fresh tomatoes and also pour in my tin tomato as well .
This is um a fresh tomato that has been blended and poured into a can .
If you like , you can use tinned tomato paste .
But I don't like tinned tomato paste .
So I'm going to cover the pot .
Allow it to um fry or cook for 10 minutes .
After 10 minutes , I will begin to add my seasonings .
So now I'm just adding the seasoning cubes , add the one teaspoon of paprika , one teaspoon of curry powder and half a teaspoon of the nut meg .
Then pour in the , the fish broth .
Before I started adding my ingredients , I lowered the heat .
Now I just turned it back to medium and I'm stirring everything together .
After stirring that I'm going to add my dry fish , which I said I've washed and deboned it .
So add it to the pot , cover the pot and allow it to cook for five minutes .
After five minutes of cooking , you are going to stir it together and then add your cooked beans .
Now , I just want to show you how the beans should look like before you add it , er , it should be about 98% cooked , like I said before .
Um as you saw now , the beans have softened um very well but not too well .
So you want , you want it to be cooked for like 98% so that when you add it together with the rice , it will now cook properly and soft together with the rice .
So once you've added the beans just add the rice , mix everything together , taste for seasoning and salt .
Now , for me , I'm going to be adding on the salt , add a tiny bit of water .
This is just to make sure that the water and the rice is at the same level .
So make sure they are at the same level , then cover it with a foil pepper or a cooking sheet together with the lid and allowed to , you know , cook for about 10 minutes .
Now , once it's about 10 minutes of cooking , as you can see , the liquid has not dried up completely .
So I'm just going to stir it together , mix everything very well , then cover it back again with the cooking sheets together with the lid and allow it to dry completely .
Now , if you follow my exact step by step on how I made this rice , you don't have to add more water to this because right now my rice and beans is perfect , perfectly cooked .
So I don't need to add more water to it .
But if yours is not perfectly cooked , you can just go ahead and add just Sprinkle a tiny bit of water , cover it back and allow it to cook to your liking .
So I'm just testing it to be sure that my rice is cooked .
