Of course , you can use vegetable oil , but I like the taste of G , I also added three tablespoons of tomato paste .
I started cooking my tomato paste before anything else changes the flavor and color .
Give that a good mix and then you want to add one tablespoon of cumin .
This is ground human dice .
Um You can use whole cumin if that's what you have on hand .
And then about half a teaspoon of ground cinnamon , one teaspoon of ground cardamom , half a teaspoon of pepper and a few cloves .
I'd say about 4 to 5 cloves should be good enough .
Give your spices and the tomato paste a good mix and let them cook for two minutes and then add some chopped tomatoes .
I chopped about five tomatoes .
You want to stir everything well , and then we're going to cook the tomatoes down .
They need to break down .
And the fastest way to do this is cover your pan or pot .
I cook this for about 10 minutes and then the tomatoes , you'll see the tomatoes start to soften up .
They weren't quite there yet .
So I had to cook them a bit longer .
So for about three more minutes and there we go , the sweet spot .
Next , I added my chicken .
You want to remove the skin and cut it into smaller pieces like I've done here .
Next , I'm adding garlic about four cloves of garlic , a chili and some ginger .
Some ground ginger about one teaspoon of ground ginger .
Give everything a good mix .
I like adding the ginger and garlic last because then the flavors stay intense .
Add about a tablespoon of salt and give that a good stir as well just to mix the salt up a bit .
So the chickens and everything is coated well .
And then finally you want to cover that and also cook it for about 15 minutes until the chicken softens a bit and then add about half a cup of mala or do what I did there .
I used , I used milk with one tablespoon of vinegar because I didn't have any molo on hand .
So that's a quick tip .
If you don't have any mala , it looks funky right now .
But don't worry , it'll all sort out itself in the end .
I , then while the chicken was cooking , I deep fried some onions that was sliced .
If you need a tutorial , that further explains deep frying onions .
I'll link it here .
The onions will be soft initially .
But as they cool , they'll crisp up .
I also added a couple of cubed potatoes and fried them for a bit .
You wanna add your onions , your fried onions to the biryani mix and just give that a quick stir and let everything cook .
Now , we're not gonna put the lid on because we want it to thicken slightly and cook it until add your potatoes and then cook your potatoes until they're soft .
Once your potatoes are soft , you're good to go and your chicken's cooked through .
Obviously , you're good to go time to plate .
I made some rice .
I'll link a tutorial for the rice here and there you go .
A very quick Swahili Biryani that tasted phenomenal .
