My name's John .
I'm a retired cook from the northeast of England in the UK and welcome to my latest video recipe .
And in this one , I'll be making another one of our customers favorites and it's this delicious , quick and easy chicken curry .

For this curry , you only need three spices , nuts , turmeric , masala , which to be fair is made up of a lot of other spices but is usually classed as one spice .
I like to use hot chilly powder , but you can use mild or medium .
It's entirely up to you and you'll also need a quarter teaspoon of salt .
And the next ingredients to prepare is the tablespoon of ginger paste and a tablespoon of garlic puree .
You can of course use fresh and finely chopped ginger or garlic .
But I find the paste mixes in better and the flavor is just right for this dish .
Plus it's convenient and it's quick .
And as you can see , I've already done the onion medium diced .
Now , this recipe serves about two .
So I'm using two decent size chicken breasts .
So with a sharp knife trim off any fat and dice them into 25 centimeter .
That's one inch cubes .
Keep a look out a little further down the video for a special deal .
I have when I do my usual book promotion and you'll also need about 15 g of fresh Coriander chopped roughly or fine .
It's up to you .
But Coriander is one of the important ingredients in this recipe and make sure you use the stalks as well .
There's plenty of flavor in those , right .
That's just about everything prepped .
Now , I'll move over to the cooker .
OK , in a large frying pan , add two tablespoons of oil and get it on the heat .
I'm using vegetable oil , but you can use whatever oil you like .
Right .
First job is to gently fry off the onions to the point where they are soft and transparent and just starting to color .
This should take around 4 to 5 minutes .
So I'll skip forward and I'll see you at that point .
Now , I like to use a wooden spatula for this job .
I do have these very cheap in the website shop .
So , you know , you're getting a bargain .
I've been using this very similar one in my commercial kitchens for over 30 years and it's still going strong .
I use it for making toffees and all sorts .
It's a very handy tool in the kitchen .

Now , Sprinkle that in and make sure all the chicken pieces have a good coat of those spices before I go any further .

I'll start with a piece of that delicious looking chicken and it's absolutely perfect .

Beautiful .
No , can't resist a fork full of that rice and curry together and it really is delicious .
Have a go , I'm pretty sure you'll surprise yourself how authentic tasting this curry turns out .
I think if you were to name it , the closest dish I can think of is the chicken Korma , but don't worry about names .
The important thing is it's absolutely delicious and you will give it a thumbs up for certain .
Then add the chopped coriander and mix it in and that's it .
It's ready to serve .
I've had some buzz Marty rice cooking at the same time .
I didn't film that because everyone seems to have their own way of cooking rice .
Besides there's loads of videos out there on how to cook rice from people .
Much more qualified than me .
