How to make Cheesy Loaded Baked Macaroni & Cheese

Hi , everybody , everybody .

I'm back , everybody .

Jeanie Young is back and I'm back with yet another amazing recipe .

We're all back from the water park .

I'm well rested up and I'm back in that kitchen today .

I'm gonna show you all how to make an amazing recipe .

I wanna show you how to make a loaded baked macaroni .

Have you ever heard of it before ?

If you never heard of it you are in for a treat .

This macaroni and cheese is loaded with everything .

Everything that you all love , it's so easy to make does not require a lot of ingredients to listen .

Here .

It tastes so good .

Here's what you're gonna need to make .

Jeanie Young style loaded baked macaroni and cheese .

You all never had this before .

You better make yourself OK ?

Everyone here are the ingredients you will need cheese .

And I have a Fiesta blend cheese that has Monterey Jack cheddar and queso .

And then I have an extra sharp cheese and I also have a sharp cheddar .

You're gonna need some bacon .

You're gonna need some bacon for this recipe .

Look how beautiful that bacon is as well as sour cream .

We're gonna use two large eggs as well as heavy whipping cream and elbow macaroni .

The spices that you will need will be black pepper , garlic and onion powder salt .

We're gonna use some PICO bread crumbs and I have beautiful green onions as well .

This is not for this video .

All right .

So let's get down to business .

Make sure your hands are impeccably clean .

I'm gonna show you all how quick and simple this is .

So now I have some water boiling on the stove and we're going to put our elbow macaroni into the boiling water .

You wanna make sure you salt your water any time you're making noodles or potatoes .

Let's make our way over to the stove .

OK ?

Everyone .

So I'm gonna use £1 of noodles .

I've salted my water .

I'm gonna use this £1 box and then I'm gonna put just a little bit of the other , but just a little bit extra about that much is gonna do me .

Now , I'm using a nine by 12 baking dish .

Let me mix around my noodles so that they don't stick and then we'll move on with the recipe .

I hope that you all are having a beautiful day today .

I hope that you all are having a great work week as well .

If you all know , you know , I went to the water park and I was exhausted .

We were exhausted when we got back .

So I had to get some rest before I got back into the kitchen .

So , so I got a nice amount of rest and I'm back in that kitchen .

Baby .

You hear me ?

OK ?

While the noodles start to boil next , you wanna start on your bacon , I'm gonna fry up some bacon .

You wanna have enough bacon to put in the inside of your macaroni and also you can crumble some on top .

So I'm gonna use juice a nice amount of bacon .

I like for the bacon to be all through the macaroni .

That way when you taste a bite of this macaroni right here , you're gonna have a piece of bacon in every bite that you take .

This recipe is absolutely amazing .

And it's so easy , so easy .

I cannot wait to show you all and most of all , I can't wait till you all make it .

So what I'll do is I think I can fit this last one in and then as the pieces get done , we'll kind of slide the ones that are on the end to the middle so they can get done as well .

Let's put this on the stove on a medium heat until it's nice and golden brown .

OK ?

So we have our bacon on medium heat until it gets nice , beautiful and golden brown .

Don't cook this until it turns black guys like seriously , you all know what golden brown looks like once it's golden brown , we'll take it out , we'll drain it on a paper towel and you can either crumble it up or you can use kitchen chairs to chop it up .

Ok .

So while the bacon cooks and also the noodles , let's take this time to chop up our scallions .

Some people say scallions , some people say green onions .

It's really up to your discretion .

What you wanna call them .

I call them delicious .

When you have a loaded baked potato .

Think about those ingredients .

When you're making this dish , you know , if you all haven't seen my video for the loaded stuffed lobster tails , check that video out as well .

It was an amazing video and it tastes so good .

But what I do is I simply think of all of the ingredients that I love to have in a loaded baked potato and that's what I'm putting into this mac and cheese .

Oh yeah , it's amazing .

And that's the same thing that I put into the stuffed loaded lobster tails and it right there .

That recipe right there turned head .

So you hear me ?

That's a recipe that no one forget .

And that's how this macaroni is too .

It's unbelievable .

I think I'm gonna go ahead and chop up the rest of these green onions because we're gonna need a little to garnish and some are gonna go into the noodles as well .

I'm gonna show you all how to make it really quick and simple yet .

So tasty cheese sauce .

And this cheese sauce is different .

It's really different from the type of cheese sauce that I showed you all how to make with my regular baked macaroni recipe .

I love that cheese sauce when I use the Velveeta and I melt it down into the cheese sauce , but this recipe does not need that cheese sauce .

We do it completely different for this recipe and you'll see it's so easy .

You just kind of put everything together and uh you have a masterpiece .

Really ?

It's so interesting .

OK ?

And when you're using this recipe , um we're gonna use the sour cream .

Feel free to use as much sour cream as you would like to use .

OK .

So what I'm doing now is I'm just giving my noodles a nice stir .

And what you don't wanna do is you don't wanna overcook your noodles .

And what I mean by that is normally , I would always cook my noodles for 11 minutes .

11 minutes is gonna give you that perfect Al Dente noodle .

And what al dente means is it means it's chewy to the tooth .

It's just perfect .

It's not mushy and it's not hard .

So what I will do since we're going to cook these noodles in the oven is I'm gonna cook a little less than 11 minutes .

How about we turn them off at nine minutes ?

OK .

So here's what we're gonna do .

You always wanna make sure before you put these noodles into your water , make sure that your water was boiling and make sure you salted it .

Now , let's take a look over at our bacon .

Our bacon is doing just amazing .

I'm gonna take a peek at the bottom and see if it's starting to get golden brown .

I don't feel like it is .

Nope .

But once it gets nice and golden brown , we're gonna turn it and the reason why I said earlier don't let your bacon get too dark is because I feel like if the bacon is too dark , it's gonna change the flavor of your macaroni and cheese .

There's a lot of people believe me .

Trust me .

When I tell you this , there's so many people that love their bacon , like extra , extra , extra crispy .

And I'm not one of those people .

I feel like once the bacon gets so dark , it starts to get somewhat of a tangy taste , you know , kind of a burnt taste .

And you don't want that to be intertwined with your macaroni .

Make sure it's just golden brown , golden brown is good enough .

OK ?

So while we wait on this , the next step that I'm gonna show you how to do is make our beautiful sauce .

Since I'm using both large eyes of the stove , I don't wanna use the small eye to make the sauce .

I'm gonna wait until the bacon is done .

Either the bacon or the noodles , whichever one is done first , then I'll use that eye to make our sauce because I want a large eye and not the small one if you all can understand that .

So I have some bacon that's starting to get done .

I'm gonna flip those pieces over .

Nice , beautiful and golden brown .

That's what you're looking for .

Oh , yeah .

And here in a second I'm gonna actually take the noodles off the stove and I'm going to put the noodles into a colander to drain them and I'm gonna rinse the noodles with cold water to stop the cooking process .

I want to stop the cooking process with the noodles because I don't want to overcook them remembering that we're going to double cook them in the oven .

All right .

Beautiful bacon .

There's like nothing better than the smell of bacon or the smell of onions and garlic cooking together or also coffee , the smell of coffee brewing in the morning and you got baking going .

Who are listening here ?

Mm .

Mm .

Everyone .

We have beautifully golden brown break bacon .

Make sure you put it on the paper towel so you don't have to deal with all of that oil .

OK .

So we have our noodles that have been drained and cooled down with cold water .

And another reason why you want to cool your noodles down is because when we put our eggs in , you don't want to make scrambled eggs .

Let's make our way over to the stove .

We're gonna grab our cheese and make a really quick and simple yet .

So tasty cheese sauce .

Ok .

Let's go ahead and make our sauce .

I have a pan here .

This is the same pan .

I cook my bacon in .

I'm gonna turn this on a medium heat .

Ok ?

You can do this with milk or you can do like I'm gonna do and use heavy whipping cream .

I love to make heavy whipping cream .

Listen here if I'm making , you know , baked macaroni cheese for the holidays or for something special , I like for it to be nice and rich .

You hear me ?

And so that's what I'm gonna do by using the heavy whipping cream .

OK ?

I'm gonna start off with half of this 32 0 32 ounce and you're just gonna start putting your cheeses into your milk .

I do want to turn it down a little bit lower , ok ?

Because you don't want to score the milk .

If you score the milk , you'll burn it .

Ok ?

Use half a bag of this one .

All right .

And these are 16 ounce bags .

I'm gonna use half a bag of this one .

I love the , the extra sharp cheddar .

I am a sucker for sharp cheddar cheese .

It's my favorite .

You know , honestly , I can make any of my baked macaroni and cheeses with nothing but sharp and it's amazing as well .

And then I'm gonna put this sharp in half a bag as well .

Now these other cheeses that we've left in the bag , I'm gonna use that as well and I'm gonna show you how we're gonna put that in the recipe .

So then let me grab my soft spatula and I like to put garlic powder and onion powder and this cheese sauce , it makes it absolutely amazing .

Trust me when I tell you don't , you dare be afraid to season anything that you cook .

If you're afraid to season your food will have no taste .

Mhm .

It'll be flavorless .

OK .

Put you some cracked black pepper in there .

This cheese sauce is gonna be amazing .

You hear me ?

My mouth is watering already .

OK ?

So now we're just gonna gently stir it around and everything will start to come together really quickly .

Like I said , don't turn this up all high because you don't want your milk or your heavy cream to score in the bottom of the pan .

You don't want it to burn .

You just want this cheese to gently start to melt and turn into a beautiful cheese sauce .

You don't have to make a roux .

You don't have to make a roux with the flour , you know , with the flour and the milk and your cheese .

You can do it this way and it's gonna be enjoyable as well .

But now during this recipe , I might put a little bit of flour in just , you know , I just might drizzle it this way over my noodles .

All depends on how I feel , but you don't need it .

OK ?

Only if I feel like I need it , I'll put some in if I feel like my sauce is a little loose .

All right .

So once this starts to melt , I'm gonna come back in the end , we'll move on with the recipe .

OK ?

So while that cheese sauce starts to cook down , let's go ahead and start dressing up are noodles .

The same seasonings that I season my cheese sauce with .

I'm gonna season my noodles as well .

But I'm only gonna put salt in the noodles and you don't need a lot .

You don't need a lot of salt .

OK ?

But just a little bit , a little bit goes a long way .

And one thing that you'll never ever see me do when I make baked baked macaroni is put butter in it .

I don't like a greasy buttery baked macaroni .

That's a no , no for me .

I do not put butter in my baked macaroni because I feel like the cheese has enough butter in it because it does .

OK .

So then here's the only salt that we're gonna use .

I feel like that's enough .

All right , I'm gonna grab a separate bowl so I can crack my eggs and get them mixed into the noodles .

You always wanna use a separate bowl because in case you were to get an egg shell , you know , when you crack it or in case you were to have a bad egg , you don't have to throw your whole mixture away because a lot of times we all do it , we all have cracked eggs before and you got egg shells into your cracked eggs .

So if you were to crack them in here and that happens , you have to throw everything away .

So you crack it in a separate bowl and you have no issues .

OK ?

So now we're gonna put some of the green onions right on the end .

Oh yeah , for me , I like a lot .

I like to see that beautiful green and going all through out .

We're gonna leave a little bit for garnish , ok ?

And we're gonna use sour cream .

You use as much sour cream as you would like to use .

You can start off with a half a cup if you like .

I'm going to eyeball mines because I know how much I need .

I know how much I like in mines .

Ok ?

So I'm gonna put about that much sour cream in there .

It gives it amazing taste .

Mm .

And then I'm gonna take some bacon .

I do need to crumble the bacon up .

I'm gonna take the bacon off the paper towel and you can cut it up or you can , you know pull it apart .

I'm just gonna crumble the bacon up and I'm gonna leave a little bit for garnish for the top just to make it nice and presentable for you all .

Beautiful .

Make sure your hands are impeccably clean .

I tell you one thing from the time I started pouring the milk in the pan and the cheese into uh the heavy cream .

I'm sorry .

My mouth has started salivating and it won't stop .

It's not gonna stop until I taste this loaded baked macaroni .

And I'm so excited .

I can't wait like I cannot wait .

It's I hope that you all are excited as well .

Well , if you don't eat pork , you can use bacon or you can use beef bacon .

You better believe you can .

There's always a substitute or you don't have to use the bacon .

Ok .

It's really up to your discretion .

We need to stop really quick .

Make our way over to the stove and check on our cheese sauce .

You can see everything is coming together .

Look at this beautiful gold .

Oh my goodness .

Listen here your girl is not gonna let you down .

You all want a good recipe .

I'm gonna give you a good recipe .

This sauce I have to do it .

I have to do it guys .

I can't , I can't .

Oh .

You better get you some extra sharp and some sharp .

Use the exact cheeses that I used and make sure you season it with garlic and onion powder and black pepper .

It makes it amazing .

Turn that stove off , take it off the burner .

Ok .

We're gonna take it right off that burner and I want it to cool down just for a little bit .

How come you want it to cool down ?

Well , the reason why I want it to cool down is because I don't want to pour into my noodles that have the raw eggs and I don't want it to scramble my eggs .

So I'm literally just gonna let it cool down for maybe 7 to 10 minutes .

OK .

So now it's time for the mixing when it's time for me to make something like this .

I have to de bling , take my jewelry off , wash my hands , make sure my hands and my arms are impeccably clean and I go right in with my hands .

Sometimes I feel like your man made your God giving tools which are our hands are best for this situation .

Get in there .

Sometimes you gotta get a little dirty .

You know , sometimes you have to , there's nothing wrong with this .

This is not garbage , this is food and you're feeding your family with your impeccably clean hands .

Get in there and mix it up .

You're gonna be able to mix this up better than you would with a utensil .

Now , I mean , honestly , if you wanted to , you could put this in a bowl and mix it around .

But I'm not trying to do a bunch of dishes .

Why not mix it right in the pan that I'm gonna use .

And then that saves me from having to wash another dish .

I don't mind doing dishes .

But if I can eliminate , you know , using another bowl , then by all means , you better believe I am .

You could eat this right ?

Just like this right off of a flip flop .

It smells so good .

Make sure the eggs are Well incorporated .

And like I told you , I might use a little bit of flour .

We'll just see .

It all depends on how I'm feeling , but you don't have to .

Now that I have everything Well Incorporated and the sauce has cooled down for 10 minutes , we're gonna bring that sauce over and I'm gonna show you what we're gonna do next .

So next , what we're gonna do , you can see that .

I have my beautiful sauce right beside me .

It's a little cool , which is awesome .

You don't want to steam it hot because you don't want scrambled eggs .

Go ahead and take extra cheese and you put it in there .

Baby .

Eat it .

Bad boy .

Look good right there .

Make sure you save a little cheese because we're gonna put some cheese on top as well but we are gonna do bread crumbs , bread crumbs and olive oil for the top .

It's gonna give you a nice , beautiful crispy top , golden brown as well .

You don't need too much cheese for the top because we have the perfect amount of cheese going all throughout .

Now we're mixing the cheese in just like .

So next we're gonna take our cheese sauce and we're gonna pour it all over .

Look at this .

Look at that .

Mm You see it .

Mhm You pour that cheese all down in there just like so and then we need to start to mix or macaroni .

Get that cheese down in there .

You want it to go all throughout your macaroni OK ?

And naturally it'll start to seep down through those noodles .

You just want to help it out a little bit now that everything is well incorporated .

Look at this .

You go ahead and put you some foil on .

We're gonna put this in the oven at 350 degrees and we're gonna cook it for around about 35 minutes and then we're gonna take the foil off after 35 minutes and we're gonna let it get nice , beautiful and golden brown .

But before after we take the foil off , we're gonna put some PICO bread crumbs to finish it with a nice , beautiful crispy , golden brown crunch on top .

So let's put this in the oven .

I'm gonna show you how to prep our PICO bread crumbs .

OK .

So we have our macaroni in the oven and I put aluminum foil on it .

PICO bread crumbs .

Get you some seasoned PICO bread crumbs .

You can use other bread crumbs .

Any kind , any kind would be fine .

But when I want a nice , beautiful crunch , when I want a real nice crunch , I always choose the PICO bread crumbs .

They never let me down .

I've used other kind of bread crumbs .

They just don't , you know , it's not what I'm looking for .

So I'm putting some oil in , you can use vegetable oil or you can use olive oil .

This is what's gonna get them nice , beautiful and golden brown .

You don't need a lot of oil a little bit .

Goes a long way .

Trust me when I tell you this and just kind of work them between your fingers this way to get oil all over those beautifully seasoned bread crumbs .

Now , you can use cheese and crackers as well for the top , for that top crispiness .

It gives you an amazing flavor as well .

I've done that with scallop potatoes and I have done that with baked macaroni and it turns out great .

Ok , so now that I have the oil all over my pink bread crumbs , when I take that foil off of that macaroni and cheese , and I put that mac back in the oven for a second time .

These are going right on top .

Everyone you can hear it's bubbling .

It's been 35 minutes and it smells and looks amazing .

Now , we're going to put pink bread crumbs right on top .

You put as much as you would like to have on yours when I make mines .

I like a nice amount .

And then you just kind of spread them out .

We're just gonna finish cooking this until the bread crumbs get nice , beautiful golden brown and crispy .

And your macaroni and cheese is done .

This right here is loaded baked macaroni and cheese .
